Let me help you solve the dilemma of what to cook for supper. My weekly meal plans have seven days of weeknight dinner ideas with recipes plus an ingredient list with the main dish. I include side dish ideas and dessert recipes too.

About this meal plan

  • This meal plan will serve at least four folks. Some recipes will serve more than four depending on your portion sizes. You can always increase the recipe to feed more.
  • Some recipes are intended to create premeditated leftovers, like casseroles or large pots of soup. Leftovers save on the budget because they are great for lunch the next day.
  • Some recipes will call for ingredients that can be used in multiple recipes for the week. Such as a head of lettuce can be used to make side salads with a small amount also portioned for tacos.
  • Recipes in weekly meal plans are typically not repeated more than once every three months.

1. Sheet Pan Nachos

This Sheet Pan Nachos meal includes a recipe for homemade Pico sauce and homemade taco seasoning. I will close my eyes and look away if you decide to buy both ready made at the grocery store. ~wink

Grocery List for entrée

Pico de gallo ingredients

  • 1-pint cherry or grape tomatoes, chopped
  • 1 large clove garlic, finely chopped
  • ¼ medium red onion, finely chopped
  • 2 T. fresh lime juice
  • 2 T. fresh cilantro leaves, finely chopped
  • Salt, to taste

Taco seasoning ingredients

  • 1 T. ground chili powder
  • 2 t. ground cumin
  • 1 t. ground coriander
  • 1 t. garlic powder
  • ½ t. smoked paprika
  • ¼ t. chipotle powder
  • ½ t. black pepper
  • ¾ t. salt

Sheet Pan Nacho Ingredients

  • 1 T. extra virgin olive oil
  • ¾ medium red onion, finely chopped
  • 2-3 large cloves garlic, finely minced
  • Sea salt and black pepper, to taste
  • 1¼ lbs. ground beef
  • 1 large bag (11-14 oz.) tortilla chips
  • 1 8-oz. bag 4-cheese Mexican blend, finely shredded
  • 2 large green onions, green parts only, sliced thin
  • 1 6-oz. can black olives, chopped
  • 1 large jalapeño pepper, sliced thin

What to serve with Sheet Pan Nachos

Guacamole, Taco soup (dump recipe), or Chicken and Cheese Quesadillas.

2. Rosemary and Pecan Covered Roasted Pork Chops

Grocery List

  • 2 large eggs
  • 3 Tbsp. Dijon mustard
  • Salt and black pepper, to taste
  • 1½ Cups pecans
  • 3 Tbsp. fresh rosemary leaves
  • 4 thick-cut boneless pork chops
  • 2 Tbsp. extra virgin olive oil
  • 6 large plums, pitted and chopped
  • 2 Tbsp. balsamic vinegar
  • 3 Tbsp. honey

What to serve with Roasted Pork Chops

Roasted Cauliflower steaks, Southern Candied Yams, Roasted butternut squash, Old Fashioned Crunchy Pea Salad, or Fresh Green Bean Salad.

3. Stovetop Cabbage Steaks and Bacon

Grocery List

  • 1 medium head of cabbage
  • 6 pieces of bacon
  • Salt & Pepper to taste

What to serve with Cabbage steaks

Waffle Iron Cornbread, Basil Grilled Tomatoes and Stewed Squash.

4. Oven Baked Smothered Cube Steak

Grocery List

  • 4 cube steaks
  • 1 small onion (optional)
  • Salt & Pepper
  • 1 cup prepared black coffee (Instant will work)
  • 1 Cup sifted flour for the cube steak
  • 2 Tbsp. sifted flour for the gravy
  • 2-4 Tbsp. olive oil
  • 1 1/2 Cups Hot water (amount may vary)

What to serve with Cube Steak and Gravy

Either rice or Homemade Mased Potatoes, Biscuits and Green beans.

5 Crockpot Taco Dump Soup

Grocery List

  • 1 15 oz. can Black Beans Do not drain
  • 1 15 oz. can Whole Kernel Sweet Corn Do not drain
  • 1 10.3 oz. can Tomato Soup
  • 1 14-15 oz. can Diced Tomatoes
  • 1 lb. Ground turkey or Ground beef
  • 1 pkg. Taco Seasoning
  • 1 Cup Hot Water

What to serve with Taco soup

Tortilla chips and Homemade Salsa, Cornbread, or salad.

6 Crockpot Roasted Chicken And Vegetables

Grocery List

  • 1 whole hen
  • 2 or 3 medium sized potatoes peeled and cut up
  • 3 or 4 carrots peeled and cut up
  • 1 medium onion peeled and sliced in big pieces (Optional)
  • 2-3 Tbsp. Olive Oil
  • 1 Cup chicken Broth
  • 2 cloves of Garlic peeled and whole
  • 1 Tbsp. Smoked Paprika
  • 1 Tbsp. Sage
  • 1 Tbsp. Crushed Rosemary
  • Salt & Pepper to taste

What to serve with Roasted Chicken and Vegetables

7 Spinach And Mushroom Stuffed Beef Tenderloin

Grocery List

  • 3 Tbsp. extra virgin olive oil, divided
  • 1 large leek, thinly sliced
  • 12-oz. baby Portobello mushrooms, diced
  • 2 garlic cloves, minced
  • Sea salt and black pepper, to taste
  • 2 Cups. baby spinach, tough stems removed
  • 2 tsp. fresh thyme leaves
  • 2 tsp. fresh rosemary leaves, chopped
  • 1½ Tbsp. fresh parsley, chopped
  • ¼ Cup Parmesan cheese, freshly grated
  • 1½ lbs. beef tenderloin roast, butterflied
  • 1 large red onion, cut into thick slices
  • 4 shallots, halved
  • 6 medium rainbow carrots, peeled and cut into 2” chunks
  • 4 sprigs fresh thyme
  • 1 Cup beef broth, preferably organic
  • 2 Tbsp. unsalted butter

What to serve with Stuffed Beef Tenderloin

Because this meal includes carrots and spinach, you don’t need much more. Choose your favorite bread and maybe a salad.
