Baked Chicken and Cheese Quesadillas Recipe

Shredded Chicken

You have choices for which chicken to use in this recipe for baked chicken quesadillas. You can cook the chicken or you can buy a Rotisserie chicken or canned chicken. Read on for more information.

You can cook the chicken using this easy Crockpot recipe with only two ingredients. Substitute Taco seasoning packets for the Ranch mix.

You can use Rotisserie chicken from the Deli at the grocery store if you are short on time. If using shredded Rotisserie chicken for this recipe, toss the shredded chicken with the Taco seasoning until well blended.

You can even use canned chicken, like this if you have it on hand. Although this might be the most expensive way to go.

One more way to cook chicken for shredding is to boil a hen, like this recipe for Chicken and Dumplings. I divide the meat in half and get two meals from boiling a hen. You can use part for this easy chicken quesadillas recipe and the other half for Homemade Chicken Pot Pie or Chicken and Dumplings.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 8 flour tortillas
  • About 3 cups of cooked, shredded chicken (Use this recipe and substitute Taco seasoning instead of Ranch mix)
  • 1 cup of sour cream
  • 2 tbsp. of Taco seasoning
  • 4 cups of shredded Fiesta blend cheese, divided

Directions

Learn how to bake delicious quesadillas in the oven in a few quick and easy steps.

Step 1

Preheat the oven to 400° and line a large sheet pan with parchment paper or a silicone baking mat like this.

Step 2

Melt the butter in the microwave in a small bowl. Brush the parchment paper or liner with half of the melted butter. Now place the tortillas on the baking sheet.

Step 3

In a large bowl, mix together the seasoned shredded cooked chicken, sour cream, taco seasoning, and 3 cups of cheese.

Step 4

Scoop a portion of the chicken mixture onto one half of each tortilla. Then add a sprinkle of cheese on top and fold the other half of the tortilla over top of the chicken filling.

Brush the top of the closed quesadillas with the remaining melted butter.

Place in the baking sheet into the oven and bake for 10 minutes then remove from the oven and carefully flip each tortilla over. Return to oven and bake another 10 minutes or until the tortillas are golden brown. Serve and enjoy!

Optional Ingredients

You can add some chopped Chipotle peppers, like these if your crew enjoys a little fire in the belly.

Add about 1/4 to 1/2 tsp of cayenne pepper with the seasonings for a little kick.

Grilled onions and bell peppers are always good in oven quesadillas.

Green chilies or red peppers will also give these sheet pan quesadillas some heat.

Add a can of drained black beans with the chicken and seasonings mixture.
