This Homemade Chicken Noodle Soup is one of the easiest soup recipes you can ever make. A beginner cook can make this dish and kids in the kitchen can too.

The first food we think of in the dead of winter is a bowl of homemade chicken noodle soup. Moms have warmed the hearts of their families and nursed a cold and sore throat with chicken noodle soup for eons.

My soup recipe is a double noodle made from scratch with carrots, celery, and chicken broth. Yummy yummy in my tummy!

For some reason, you can get those carrots and celery vegetables into your kid’s bellies in a big bowl of the best chicken noodle soup when they won’t eat it any other time.

Ingredients in Homemade Chicken Noodle Soup

Simple ingredients, most of which you probably keep in your pantry are all you need for a good chicken noodle soup recipe.

  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tsp. Olive Oil
  • 4 cups Chicken broth, see how to make your own here
  • 2 cups dry spaghetti noodles broken into pieces
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper

How to make this easy homemade chicken noodle soup

Step 1

Heat oil in a large soup pot or Dutch oven.

Add the diced carrots and celery and cook for about 3 or 4 minutes or until the vegetables begin to soften, stirring occasionally.

Step 2

Add the chicken broth to the vegetables and bring to a full boil on medium-high heat.

Stir in the salt and pepper.

Step 3

Now stir in the noodles and cook for about 8 minutes.

One of the things that make this the best homemade chicken noodle soup is that I doubled the noodles for a more hearty meal.

Step 4

Remove from the heat and allow the noodles to continue soaking up the liquid until the noodles are tender.

Variations for chicken noodle soup

This classic chicken noodle soup is a great recipe, but I know sometimes we need and want a little more.

Make homemade broth

If you would like homemade broth for your soup base you will begin by boiling the meat. You can boil a whole chicken, boneless chicken breast, or chicken thighs. But be sure you have added enough water to the pot so you have a yield of 4 cups of broth to make the soup. How To Make Chicken Broth.

If you make your broth to begin this soup, use the leftover chicken to make a Chicken Vegetable Casserole or a Homemade Chicken Pot Pie.

Add Meat

If you are like me with meat-loving men sitting at your dinner table, add some chopped or shredded chicken to the pot. Traditional chicken noodle soup has very little to no meat so don’t go overboard. Rotisserie chicken is good in this soup.

Add Herbs

  • 1 tsp. Olive Oil
  • 4 cups Chicken broth
  • 2 cups dry spaghetti noodles broken into pieces
