This recipe for slow-cooker taco soup came from my daughter. She made it for us every year on Halloween when the grandchildren were younger. We would have an early dinner followed by trick-or-treating with the grandchildren. Good memories.

One of the great things about this recipe is that it is a budget-friendly, one-pot meal.

With only seven ingredients and lots of flavors, this is the best recipe for taco soup.

Ingredients

  • 1 15 oz. can of Black Beans Do not drain
  • 1 15 oz. can Whole Kernel Sweet Corn Do not drain
  • 1 10.3 oz. can Tomato Soup
  • 1 14-15 oz. can of Diced Tomatoes, I use these
  • 1 lb. Ground turkey or ground beef, browned and drained
  • 1 pkg. Taco Seasoning mix
  • 1 Cup Hot Water or chicken broth (I use chicken broth for more flavor)

Optional Toppings

  • Sour cream
  • Shredded cheddar cheese

Make this easy comforting soup any time of the year. It’s a hearty meal to serve in the winter during soup season and a perfect Taco Tuesday dinner anytime.

Directions

Step 1

Prepare the Crockpot with one of these wonderful slow cooker liners to make clean-up even easier.

Set the Crockpot to high.

Step 2

Brown the ground meat in a large skillet over medium heat. Drain the excess grease from the meat and set the meat aside.

Recipe Tip: You can add a little kick to your recipe by sprinkling chili powder over the meat while it is cooking.

Step 3

Pour the first four ingredients into the crockpot and give it a good stir to blend. Then stir in the last three ingredients, place the lid on the Crockpot and go enjoy your day while dinner slowly cooks.

Dinner will be ready in about 2 or 3 hours on high or 4 to 6 hours on low.

What to serve with Taco Soup

We enjoy having tortilla chips on the side with our taco soup. We crunch them up into a bowl of taco soup just like you would saltine crackers in Vegetable soup.

Corn chips are also well crunched on top of this hearty taco soup.

Another good side dish for taco soup is pimento cheese sandwiches. There is just something really good about homemade pimento cheese sandwiches served with soup.

Recipe Tips

I use Reduced Sodium Black Beans. You can substitute canned Pinto beans, Kidney beans, or Chili beans.

Basil, Garlic, and Oregano tomatoes add loads of flavor and are available at the grocery store. I often use the low-sodium kind. The diced tomatoes work best in this recipe.

There is no salt added because the corn, tomato soup, and taco seasoning have plenty of salt.

Use chicken broth instead of water for added flavor.

  1. I have a recipe similar to this one for taco soup, but not for in a slow cooker and it doesn’t have the taco seasoning either. Pinning to make this recipe. Its perfect for fall and for when Hubs is away and I just want something I can make quickly. Yum

  2. Hi Shirley, this soup looks and sounds so good. Thanks for sharing at our Cooking and Crafting with J & J.
    Enjoy the week

  3. A lovely soup and so easy with the crockpot. I shall be trying this baby out real soon. I wanted to comment on gallstones. you left a comment on Vanessa’s blog about your gallstones. since I hosted the Dishing It & Digging It link party that week, I am the one with the gallstones…LOL I appreciate your feedback on the matter. It is quite scary when you think you are having an heart attack.

    1. Hi Linda, that is exactly what happened to me. Since I’ve never had a heart attack, I didn’t know what it felt like but at the time, that amount of pain seemed sufficient. My gallbladder was removed shortly after that incident, no more problems.
The Taco Soup is scrumptious. I can’t believe I waited so long to learn to make it.

  4. Crockpot Taco Soup has been a family favorite for years. I usually make it with ground beef or sometimes I make it vegetarian. I’ve never tried it with ground turkey and can hardly wait to try your daughter’s version. Sounds delicious for a cold winter night (if it ever turns cold – lol). But, then again, I eat soup all year long. Looks yummy!

    1. My hubby would probably faint if I left the meat out of any soup. I tried that one day last week and he cracked me up laughing at him about it.
Actually, this is my version, my daughter makes hers slightly different with different beans and a couple of other steps. Sometimes, she doesn’t add the tomatoes since the children balk about them.
I’m like you, I could eat soup all year also.

    1. Oh yes, it does smell yummy while cooking. We will be having Taco Soup often now that I know how and we love it so much. It’s certainly easy to prepare with only 7 ingredients!

We enjoying hearing from you!
