Instant Pot Sausage Tortellini Soup Recipe

Soup season is always a fun time of year. It coincides with casserole season and is a great time to try new recipes in your kitchen. A hearty soup on a cold winter’s day warms the soup while filling the tummy.
I have been making this Country Style 15 Bean Soup on the stovetop at least once a month. Beef broth and country-style ribs make this a scrumptious one-pot meal and the leftovers are great. Anything tortellini quickly becomes a favorite though.

Ingredients
Simple ingredients you can pick up at the grocery store make this easy dinner recipe.
- 19 oz. Cheese Tortellini
- 2 Cups Fresh Baby Spinach
- 14.5 oz Can Diced Tomatoes
- 16 oz Ground Sausage
- 32 oz Chicken Broth
- 8 oz Cream Cheese
- 1Tsp Salt
- 1 Tsp Black Pepper
- 2 tsp Italian seasoning
Ingredient Substitutions and Variations
Cheese Stuffed Tortellini can be found in the refrigerated section of the grocery store. You will find a variety of flavors of tortellini to choose from, go ahead and get the one you like the most. Make the recipe your own. While I used the 19 oz. package, your store may have different size packages. Get the largest but not to exceed 19 ounces. If you feel like you want more soup broth than tortellini get a smaller package.
Fresh Spinach can be found in the produce department, generally in bags that are already washed, drained, and ready to use. Baby spinach is best because the leaves are smaller. If you cannot find baby spinach, you can chop up the spinach into smaller bite-size pieces prior to adding it to the recipe.
Sausage is our choice of meat for this instant pot soup recipe. I used turkey sausage but sometimes use a mild Italian sausage. You can also use ground beef, pork sausage, ground turkey, or Italian sausage. Any of these amazing flavors will be good in this creamy sausage tortellini soup.
Italian seasoning adds a delicious flavor to this tortellini soup recipe. You might like to keep Italian seasoning on hand for lots of recipes. Optional Ingredients you may like to add a few red pepper flakes if your family enjoys a little heat. Diced onion can be cooked along with ground meat while it is browning. Minced garlic can be added along with the other ingredients in step two. You can substitute beef broth or vegetable broth for chicken broth if you would prefer either of those flavors in your easy tortellini soup.
Directions
Step 1
Set your Instant Pot onto ‘saute’ and brown the sausage, breaking it up with a wooden spoon while it cooks.
Step 2
Now add the tomatoes, tortellini, salt, pepper, cream cheese, and chicken stock into the Instant Pot and mix well to combine.
Step 3
Close and seal the pot and turn it onto ‘manual high’ for 5 minutes of cook time. Then do a quick release.
Step 4
Turn the instant pot back on to ‘saute’ and stir in the spinach using the wooden spoon. Allow the cheesy tortellini to sit for a couple of minutes.
Give your delicious creamy tortellini soup a stir then serve and enjoy!

- 1 (14 oz.) can diced tomatoes
- 1 (16 oz.) pkg. ground sausage
- 32 oz. chicken broth
- 8 oz, cream cheese, softened
- 1 tsp. salt
- 1 tsp. black pepper
- 2 tsp. Italian seasoning
Instructions
Set your Instant Pot onto saute and brown the sausage, breaking it up with a wooden spoon while it cooks.
