An easy Crockpot leg quarters recipe with only two ingredients.
Our Two Ingredient Crockpot Leg Quarters Zesty Italian flavor has made many appearances on our weeknight dinner menu. That is because this is one of those fix-it-and-forget-it menu options we all love.
Personally, I love chicken. It is such a versatile menu item and is currently still affordable at the grocery store. This entree only needs 2 ingredients and it doesn’t get much easier than that! This is one of my favorite recipes for easy chicken leg quarters.

Cooking Chicken Quarters in the Slow Cooker
We are usually cooking for two so sometimes I only have two leg quarters in the Crockpot. I have gotten three leg quarters in my big Crockpot and think four would fit. Although I have not tried it, I think layering them would work but you would need to add more cooking time.
Layers Tip
If you are layering your leg quarters in order to cook more, be sure to sprinkle the seasoning onto each layer separately or toss the leg quarters in a Ziploc bag with the seasoning prior to adding them to the Slow Cooker.
Be sure to remove as much fat as you possibly can so you’ll have fewer juices in the bottom of the pot. We do want some juice which is why I don’t remove the skin prior to cooking.
Ingredients
This recipe uses only two very simple ingredients.
- One packet of Zesty Italian dressing mix, like this
2. Leg Quarters
Instructions
Step 1
Turn your large Crockpot onto the low setting. Line the crock with these disposable Crockpot liners for easy clean-up. I love these!
Step 2
Rinse the leg quarters under cool running water and pat dry with paper towels.
Step 3
Place chicken into the Crockpot skin side up and sprinkle the Zesty Italian seasoning over top. If you prefer, you can place leg quarters into a plastic reseal bag then pour in the seasoning and toss to coat all over. Then place the chicken into the slow cooker.
Step 4
Cook on the low setting for about 3 to 4 hours or until the chicken registers 165° internal temperature on a meat thermometer.
There will be a very small amount of chicken fat in the bottom of the Crockpot. This helps to keep the chicken moist.
Serve and enjoy!
Variations
If you are not a fan of dark meat, substitute chicken breast for the leg quarters and follow the rest of the recipe. Because chicken breasts are thicker meat, it may be necessary to adjust the cooking time slightly. You can use the medium heat setting to speed up the process.
Substitute any dry Italian seasoning flavor for the zesty. Sprinkle on a little onion powder for a nice addition to the flavor.

You can put the leg quarters into a Ziploc bag and sprinkle the Italian Seasoning Mix over them then close and shake well to cover before putting the chicken in the Crockpot. I have done it both ways and it comes out delicious either way.
