If you have been around this blog for long, you know that my hubby does a fair share of the cooking in our home. I very much appreciate his cooking skills especially his penchant for creating desserts, like his famous Strawberry Cake! He is our Shrimp Fried Rice chef and has been for quite a few years.
Shrimp. Use fresh or frozen shrimp. If frozen, thaw before cooking. Peeled and deveined are best for this dish. When we buy jumbo shrimp, we cut them in half before cooking.
Rice. This recipe uses white rice. You can cook the rice early in the day if you like to save time. Most long-grain white rice is a two-to-one ratio such as two cups of water to one cup of rice. Cold day-old rice will work too!
Peas and carrots. Frozen peas and carrots add the vegetables to this dinner. Take them out of the freezer and leave them on the counter to thaw as you begin gathering your tools and ingredients to cook this dish. Canned peas and carrots do not work well in this recipe because they will become too mushy during the constant stirring this dish requires for blending the flavors.
Sesame oil. Sesame oil adds a nice flavor but if you don’t have it on hand, go ahead and use the oil you have. Olive oil or vegetable oil will work but Sesame oil is a great secret ingredient to the flavor profile of this dish.
Soy Sauce. This is where your nice savory flavor is coming from. The soy sauce is key to the shrimp fried rice flavors.
Onion. Don’t skip the onion. It adds flavor. You can chop them fine so when they cook, they will barely be noticeable except for their flavor.
Eggs. Lightly beat the eggs in a small bowl before you begin.
Fried Rice Seasoning Mix. I use this brand of Fried Rice seasoning mix. You can find it in the grocery store usually in the International food aisle.
Yum Yum Sauce. Our favorite topping for Shrimp Fried Rice is Yum Yum Sauce from the grocery store. You can find it at the grocery store on the aisle with sauces or at your wholesale member store like Sam’s Club. This is our preferred brand.

Variations
You can substitute boneless skinless chicken for the shrimp. Cut the thawed chicken into small bite-size pieces and cook in a skillet with the soy sauce until done, just as you would the shrimp.
During the Corona Virus Covid 19 Pandemic while we were using what we had on hand, we got a little creative with this meal. I shared a Facebook Live video making this dish with what we had on hand at the time. See it right here.
Storage and Reheating
Store in an airtight container in the refrigerator for just a couple of days. Reheat in the microwave, covered for only a minute at a time until warm.
