If you love a good cabbage recipe, this one is loaded with flavor and you can also add it to your one pan meals collection.
Ingredients
- 1 lb. smoked sausage
- 1 can diced tomatoes with chilies (Rotel)
- 1 cup brown rice (substitute white if needed)
- 1/2 medium head of cabbage, chopped
- 2 tsp. Old Bay seasoning
- 1 (15 oz.) can chicken broth

Directions
Step 1
Take out the largest skillet you have with high sides. Mine is like this one that holds over 5 quarts. If you don’t have a large enough skillet, use your dutch oven.
Chop the cabbage into bite-size pieces. Rinse in a colander and let it drain while you chop the sausage.
Step 2
Chop the sausage into bite-size pieces with a sharp knife.
I usually buy smoked sausage for this meal but you can also use kielbasa sausage, Italian sausage, turkey sausage, polish sausage, chicken sausage, andouille sausage, or whichever flavor you prefer. The kind of sausage you use is your choice. We like the smoky flavor sausage.
Step 3
In a large skillet, bring the chicken broth and tomatoes to a low boil on medium-high heat, stirring occasionally. Then add the Old Bay seasoning and stir. Old Bay is my favorite cajun seasoning and I also use it in my Crabmeat Stew recipe.
Step 4
Add the cabbage to the mixture in the skillet and simmer on low for about 30 minutes or until the cabbage is tender.
Step 5
Stir in the sliced sausage and rice and simmer on low with the lid on until the rice is done, about 20-30 minutes. Brown rice takes longer to cook than white rice.
Because rice will absorb the liquid, there is a possibility you may need a little more liquid before adding the rice. You can use water or more chicken stock, whichever you have. Let the liquid come back to a boil before adding the sausage and rice.
Once the rice is tender, this delicious cabbage and sausage dinner is ready to serve! Because it is a complete meal in one pan, no need for sides. Add your favorite dinner rolls or cornbread if you like.

Skillet Cabbage Rice & Sausage One Dish Dinner is packed with flavor! We just set the skillet on the table and make this weeknight dinner even easier to clean up! This meal is one of our all-time favorite recipes.
The original recipe in the magazine had a whole lot of ingredients. We are busy people and don’t often have time to devote to tons of ingredients and lots of steps in recipes. So I took it upon myself to create an easier version, full of flavor with less work. The result is a delicious recipe on the dinner table in about an hour.

Can I use beef broth instead of chicken broth ?
Hi Christy, I have never used beef broth instead so I can only say the flavor would be very different I expect. Let me know how it goes! Beef broth has a very different flavor than chicken broth.
This was my first go around with this recipe. I knew better than to cook the cabbage before the brown rice. I will use white basmati rice next time because that is my go to. I started cooking this at about 6:45pm and it is now 9:00pm.
Thank you for the recipe Miss Lady
P.S. Flavor is delicious 😉
We always use Brown Rice and cook the cabbage first. The last time I made it just a few days ago, we left the rice out completely in an effort to curb carbs. Glad you like the flavor combo. It is really delicious.

I have to give this a try! I need another sausage recipe. Pinned and shared. Thank you for partying at #overthemoon.
This looks great, Shirley! I make sausage and cabbage, but I’ve never added rice to it!
Easier is always better. Nothing gets me like long drawn out recipes with a million ingredients! My mom used to make cabbage with rice when we were growing up and used to love it. So glad you finally found the correct ingredients to make it your own. Nothing beats the flavor of diced tomatoes with chilies.
I love how you took a long drawn out recipe and totally redid it to fit your needs. I happen to be in love with one dish dinners – less cleanup and always tasty. And I have to say that cabbage is one of my favorite sides. Your skillet dinner will be a huge hit at my house. Thanks for sharing and have an awesome weekend, Shirley!
This reminds me of a dish my Mom used to make (passed on from my Polish grandmother). I love that you made this a skillet dish for easy week nights!
