In a saucepan, bring the water to a boil.
Add 1 tsp. salt.
Stir rice into the boiling water then turn down to low and simmer for about 20 minutes until rice is done.
Remove from heat and cool completely.
Heat 2 Tbsp. Soy Sauce in a skillet and cook the prepared shrimp for about 5 minutes. Remove from heat and set aside.
Heat oil in a very large skillet or electric skillet and immediately add the rice.
Stir fry the rice in the hot oil for several minutes until well heated, breaking up any clumps.
Push all the rice to the side of the pan and add 1 Tbsp. Oil to which you quickly add the eggs.
Scramble the eggs.
Stir the scrambled eggs into the rice until well blended.
Add the seasoning and 1/4 Cup Soy Sauce and stir until well blended.
Stir in the thawed Peas and Carrots.
Last, add the cooked shrimp and stir into the mixture of Rice and Veggies.
