Meatless Taco Salad Recipe

Ingredients
- 1 Cup shredded Iceberg lettuce
- 1/2 Cup Shredded Sharp Cheddar Cheese
- 1 cup drained and rinsed Low Sodium Black Beans (canned)
- 1 Cup drained Sweet Corn (canned)
- 8 oz, Sour Cream
- (1) 1 ounce packet of Taco Seasoning, optional
- 2 Roma Tomatoes chopped

Edible Taco Salad Bowl
This recipe begins by making your edible tortilla shell bowls, directions are here. I used wheat tortilla, you can use flour shell if you like. These Taco salad bowls can be made a day or two in advance and stored in an airtight container until ready to serve. Of course, fresh is always better.
Lettuce
I use Iceberg lettuce for my salad but you can use romaine lettuce. I find Iceberg to be more crisp and perfect for salads. Shred your lettuce by hand into bite-size pieces for this salad.
Black Beans
When purchasing canned Black Beans, get the low-sodium version. Always drain canned beans in a colander and rinse to remove some of the excess sodium.
Benefits of eating Black Beans:
- They are loaded with fiber and we know we need more fiber for a healthier digestive system.
- One cup of black beans contains 15 grams of protein.
- The protein content makes Black Beans a good meat substitute.
- Beans are high in minerals and fiber without saturated fat which raises cholesterol.
Tomatoes
Roma tomatoes are great in salads because they are firm and smaller so they don’t have as much moisture. Cut your Roma tomatoes into bite-size pieces to be added to your salad. Can’t find Romaa tomatoes? Substitute cherry tomatoes and cut them in half.

Guacamole or Sour Cream
We prefer Sour Cream on our Taco Salad but you can substitute or add Homemade Guacamole if you like. Here is our super easy Homemade Guacamole recipe. Both are good choices. We typically do not use traditional salad dressing on a taco salad. When using sour cream for our dressing, we sometimes mix a 1-ounce packet of taco seasoning with the sour cream for more flavor.

Ingredients
- 1 Cup shredded Iceberg lettuce
- 1/2 Cup Shredded Sharp Cheddar Cheese
- 1 Cup drained and rinsed Low Sodium Black Beans (canned)
- 1 Cup drained Sweet Corn (canned)
- 8 oz, Sour Cream
- 1 oz. packet of Taco seasoning

Instructions
- Mix the taco seasoning with the sour cream and set aside.
- Layer the ingredients into the bottom of the Taco Salad bowl beginning with the lettuce
- Next add a dollop of the sour cream
- Then add Black Beans and Corn
- Next add the tomatoes
- Then add the shredded cheese
- Finally add another small dollop of the sour cream
- Serve and enjoy

How to pack Taco Salad into a Mason Jar for lunch
Skip the sandwich and take a Mason Jar Salad for lunch. Be sure to layer the ingredients in a certain order to keep them fresh. Use a wide-mouth Mason jar.
Begin with the Sour Cream Dressing on the bottom. Next add the Beans followed by the tomatoes, corn, and cheese and finally the lettuce goes on top. Take a plate to dump it on and enjoy a healthier lunch.
