Easy Beef & Bean Burritos
This easy Beef & Bean Burritos recipe is made from scratch beginning with dried Pinto beans. It is a budget-friendly and versatile meal.

Ingredients
- 1 lb. dry Pinto beans
- 1 lb. ground beef, brown and drain
- 2 pkgs. Taco seasoning
- 1 can diced tomatoes and green chilies
- ½ Cup sharp shredded cheese
- 1 pkg. Flour tortillas
- Water

Step 1
Rinse Pinto beans and add to a Dutch oven or large pot. Cover beans completely with water and bring to a boil, stirring occasionally.
Add one package of taco seasoning and stir. Cook until the beans are tender, for several hours, adding more water as needed and stirring occasionally.
As beans become tender, stop adding water and turn the heat low. Continue to simmer until almost all of the liquid has evaporated. Remove from heat but leave the beans in the pot.
Cooking Dried Beans Tip
It takes a few hours to cook dried peas or beans until they are tender. You can shorten this cooking time by soaking the beans in water overnight.
NOTE
My recipe uses cooked dried pinto beans. You can substitute canned pinto beans if you like. I won’t tell.
Step 2
Brown and drain the ground beef then set aside.
Step 3
To the beans, add the can of tomatoes, ground beef, and the other package of taco seasoning. Then simmer on low until most of the juice has evaporated, stirring often.

Step 4
Spray an oblong casserole dish with non-stick cooking spray.
Stuff the flour tortilla shells with the hot beef and bean mixture. Fold the shell and place it in a casserole dish folded side down.
Step 5
Top with shredded cheddar cheese and place into a preheated oven at 375° just long enough to melt the cheese. Serve and enjoy!

- To the beans, add the can of tomatoes, ground beef and the other package of taco seasoning.

- Place in preheated oven just long enough to melt the cheese.
