Pork Chop Casserole

This Pork Chop Casserole with potatoes recipe is an easy and unique casserole recipe.
My recipe for Pork Chop Casserole begins with bone-in pork chops seasoned with smoked paprika. Thinly sliced potatoes and mushrooms cook together with the pork chops in the oven for a warm and hearty meal.
Pork Chops, Potatoes, and Cream of Mushroom soup will get this dish on the table for a stick-to-the-ribs yummy delight. Mushrooms and onions are optional.

My Mom made this as my brothers and I were growing up. I have no idea where my mother originally got the recipe. She very well may have made it up. I just don’t know.
This potato and pork chop casserole has always been an easy go-to recipe for those busy times when a good, hot meal is needed but not much time is available for meal preparation.
Ingredients
Simple ingredients you can find at your grocery store. The printable recipe card includes instructions for making this dish with thin sliced pork chops as well.
- 6 Bone-in pork chops (average, not really thick)
- 1 Can Cream of Mushroom Soup
- 4-5 medium Red Potatoes, sliced thin
- 1 carton of fresh sliced mushrooms, rinsed (optional)
- Salt and Pepper to taste
- 1 Tbsp. Smoked Paprika
When I am cooking for two, I generally use boneless pork chops and prepare two for my hubby and one for myself. With the oven to 350°, supper will be ready in under one hour.
This recipe is easily adjustable for two or three people or for a crowd. I have updated the recipe to include instructions for making a large casserole with bone-in pork chops.
Step 1
Preheat the oven to 400°. Spray a large baking dish with non-stick spray.
Rinse the pork chops and place them into your prepared baking dish. Sprinkle both sides of the pork chops with salt and pepper.
Step 2
Wash the potatoes under running water using a vegetable brush. Then slice the potatoes thin with skins on. Place your thinly sliced potatoes on top of the Pork Chops.
Step 3
Pour the can of soup over top of the potatoes and spread evenly.
Step 4
Place the rinsed, sliced mushrooms around the edges of the dish.
Step 5
Cover with foil and Bake for about 40 minutes. Then remove the foil and continue to bake for another 10 minutes. Pork chop temperature should reach 160°. The potatoes should be tender.
Step 6
Sprinkle with smoked paprika and serve.
How To Cook Pork Chop Casserole with only 3 Ingredients
- Pork chops
- Sliced thin fresh potatoes
- Cream of mushroom soup
Follow the above directions using only the pork chops, potatoes, and cream of mushroom soup. You will want to coat the pork chops with salt and pepper before adding to the baking dish.
Leftover Suggestion
Deconstruct the casserole and use the leftover Pork Chops to make Pork Chop Sandwiches the next day! Remove the bone and reheat them in a skillet then build some yummy sandwiches with your choice of toppings.
Substitution for fresh potatoes
Although cooking from scratch with fresh ingredients is always best, you could use canned potatoes if you don’t have time to prepare fresh ones. You will probably need to reduce your cooking time but I am not sure how much as I always used fresh potatoes.
Did you know, that the skins on the potatoes provide fiber to your diet? Yep, and we do need to find ways to add more fiber to our diets.

How to Make This Pork Chop Casserole with only 3 Ingredients
The original recipe used only 3 ingredients;
- Pork Chops
- Potatoes
- Cream of Mushroom soup
When times are hard and money is tight, skip the mushrooms and don’t purchase Smoked Paprika if you don’t have any on hand. Of course we pretty much all have some Salt and Pepper in the kitchen so by all means, season the meat and potatoes.
Pork Chop Casserole
Ingredients
- 6 Bone-in pork chops average, not the really thick one’s
- 1 Can Cream of Mushroom Soup
- 4-5 medium Red Potatoes sliced thin
- 1 carton of fresh sliced mushrooms rinsed (optional)

Instructions

- Wash the potatoes using a vegetable brush then slice thin with skins on.
- Place the potatoes on top of the Pork Chops.
- Pour the can of soup over top of the potatoes and spread evenly.
- Place the rinsed sliced mushrooms around the edges of the dish.
- Cover with foil and Bake 40 minutes.
- Remove the foil and continue to bake 10 minutes.
- Oven temperatures vary. Potatoes should be tender and pork chops should reach 160°
- Sprinkle with Smoked Paprika when removed from the oven while still hot.
- Serve and enjoy!

Notes
- Preheat the oven to 350°
- Wash and drain the pork chops and place into prepared baking dish.
- Sprinkle pork chops with salt and pepper to taste.
- Place the potatoes on top of the Pork Chops.
- Pour 1 can of cream of mushroom soup over the top of the pork chops and potatoes.
- Place mushrooms around the edge.
- Cove with foil and bake at 350° for 30 to 45 minutes. (Oven temps vary)
- Remove foil the last 10 minutes.
- Sprinkle with Smoked paprika when removed from the oven while still hot.

You can never go wrong with mushroom soup! My grandmother used to make something similar to this, but she used baked potatoes on the bottom, layered the pork chops on top and then smothered with the soup. Can’t wait to give this simpler version a try!
