Ingredients

This easy recipe uses a few simple ingredients that you may already have on hand.

  • 3-4 pieces of boneless skinless chicken breast or thighs
  • 2 packets (.87 oz.) Chicken gravy, like this
  • 1 (10.5 oz.) can of cream of chicken soup
  • 1/2 cup of chicken broth or water
  • salt and pepper, to taste

Substitutions & Additions

CHICKEN GRAVY MIX: Substitute two tablespoons of powdered chicken gravy mix instead of two gravy packets.

HOW TO THICKEN THE GRAVY: When the chicken is almost done, dip up about 2 tablespoons of liquid from the pot into a small bowl and mix 2 tablespoons of cornstarch in with it. Keep mixing until you have not lumps. I use a small whisk. Then pour your cornstarch slurry back into the Crockpot and stir. Replace the lid and allow to simmer until done, at least another 20 to 30 minutes.

ADD SOUR CREAM: If you love the extra flavor and creaminess of sour cream, add about a half of a cup of sour cream when you shred the chicken and stir well. You will enjoy a flavorful creamy gravy.

CHICKEN: You can use boneless, skinless chicken thighs, chicken breast or chicken tenderloins for this recipe.

CHICKEN BROTH OR WATER: You can use water instead of chicken broth if you don’t have any on hand. Here is my recipe for homemade chicken broth you can keep in the freezer.

POULTRY SEASONING: Add a sprinkle of poultry seasoning when you add the salt and pepper to the chicken if you love a stronger flavor in your meals.

Step 3

Once the chicken is done, remove the meat from the slow cooker using a slotted spoon onto a pan with sides. Shred with two forks and return the meat to the Slow cooker. This is a good time to thicken the gravy using the directions above.

NOTE- the chicken will be falling apart so it is very easy to shred.
