Slow Cooker Bacon Wrapped Pork Loin Recipe

Ingredients

  • (1) 3lb. boneless Pork loin
  • 1 Tbsp Vegetable oil
  • 1 Tbsp onion powder
  • 1/4 cup light brown sugar
  • salt and pepper to taste
  • 6 to 8 slices of thick-cut bacon
  • 1 medium onion peeled and cut into fourths (optional)

Slow Cooker Bacon Wrapped Pork Loin Recipe

Ingredients

  • One 3 lb. Pork Tenderloin
  • 1 Tbsp. vegetable oil or canola oil
  • Salt & Pepper to taste
  • 1 Tbsp. Onion Powder
  • ยผ cup light brown sugar
  • 6 to 8 slices of thick cut bacon
  • 1 Medium Onion peeled and cut in fourths optional

Instructions

  • Prepare your Crockpot. Either spray with non-stick cooking spray orย line with one of the disposable Crockpot liners.
  • Rub the exterior of the pork loin with the vegetable oil. Then sprinkle with salt, pepper, onion powder, and brown sugar.
    Now, wrap the bacon slices around the pork loin and place it into your Crockpot. If it is easier for you to drape the bacon around your pork loin, that will work too. You can do this step in the Crockpot or on a cutting board and then transfer to the Crockpot, whichever works easier for you.
    If you are using the onion, place the slices around the outside of the meat. They will create more flavor while the meat is cooking.
  • Set your Crockpot temperature to the low setting and cook for about 4 or 5 hours. Pork is done when it reaches an internal temperature of 145ยฐ. Use a meat thermometer to test your pork loin.
  • While the bacon will be done, it wonโ€™t be crispy having been cooked in a slow cooker. To crisp the bacon, remove the pork loin onto a foil-lined baking pan. Place in the oven on the middle rack under the broiler on high for about 3 to 5 minutes. Keep a check as oven temps vary. Remove from the oven and let the meat rest for about 7 to 10 minutes before slicing to serve.
  • Serve and enjoy!

Notes

It is not necessary to add liquid to the pot. The juices from the pork loin and the bacon will be plenty.

  1. This looks delicious, Shirley. The basket weave might be pretty, but I would opt to just wrap it around the pork loin like you did. This one is going on my must try list. Pinning and planning on trying it soon.

  2. Great minds think alike – I did a bacon wrapped pork for the March challenge! I did mine in the oven but this recipe would definitely work better in the summer so I don’t have to heat the oven!

  5. Okay, so much yes to bacon wrapped anything! I love that this is a Crock Pot recipe. The bacon looks like it still crisped up some which is pleasantly surprising. This one definitely goes on the summer meal plan. (Also, I’m suddenly realizing I haven’t had breakfast yet lol)
