Bacon Wrapped Herb Butter Pork Loin Recipe

Ingredients
Simple ingredients you can easily find at your grocery store. Nothing special to buy.
- 3 lb. pork loin
- about 7 or 8 pieces of thick sliced bacon
- 1/4 cup brown sugar
- salt and pepper to taste
Ingredients for Herb Butter
- 1/2 Stick of salted butter, softened
- 1 Tbsp. Herbs de Provence
Directions
We begin by making our herb butter which is quick and easy. Be sure to take your butter out of the fridge several hours before you are ready to begin cooking so it can soften at room temperature.
Step 1
Place the softened butter in a small bowl. Sprinkle the Herbs de Provence onto the butter and stir until well blended. Set aside. You can cover with plastic wrap if you like. You’ll be using it in just a few minutes.
Step 2
Preheat the oven to 350° Then prepare your baking dish with sides by lining with foil or spray with non-stick cooking spray. I like to line my baking pan with foil for best results when it is clean up time. The pan will be partially filled with bacon drippings and excess fat from the pork.
Place your pork loin into a prepared baking dish. Sprinkle with salt and black pepper. Generously spread the herb butter all over the whole thing. Then, wrap the bacon slices onto the pork loin. Bacon will stretch just a tad so I do not use toothpicks to hold them in place. I find they stay just fine.
Now sprinkle the bacon with the brown sugar.
Step 3
Cover with aluminum foil and roast covered in your preheated oven for about 35-45 minutes. Use your digital instant-read thermometer to check the internal temperature. Pork is well done when the internal temperature reaches 145°.
Step 4
Remove foil and broil just long enough to have crispy bacon. Do not leave once you turn the broiler on. The bacon will be crispy very quickly. If you walk away, it might burn.
Remove from oven once bacon is crispy and let your tender pork rest for at least 10 minutes before slicing to serve.
Remove your pork loin carefully from the roasting pan onto a cutting board. Slice, serve and enjoy.
Homemade mashed potatoes and green beans go well with this baked bacon wrapped pork loin. A very satisfying meal and especially great during comfort food season.
