Pork Loin Ingredients
3-4Lb.pork loin
7-8slicesthick sliced bacon
1/2tsp.salt
1/2tsp.black pepper
Instructions
We begin by making our herb butter which is quick and easy. Be sure to take your butter out of the fridge several hours before you are ready to begin cooking so it can soften at room temperature.
Place the softened butter in a small bowl. Sprinkle the Herbs de Provence onto the butter and stir until well blended. Set aside.
Preheat the oven to 350° Then prepare your baking dish with sides by lining with foil or spray with non-stick cooking spray.
Place your pork loin into a prepared baking dish. Sprinkle with salt and pepper. Generously spread the herb butter all over the pork loin. Then, wrap the bacon pieces onto the pork loin.
Now sprinkle the bacon with the brown sugar.
Cover with foil and roast covered in your preheated oven for about 35-45 minutes. Use your digital meat thermometer to check the internal temperature. Pork is well done when it reaches 145°.
Remove foil and broil the bacon to make it crisp. Do not leave once you turn the broiler on. The bacon will be crispy very quickly. If you walk away, it might burn.
Remove from oven once bacon is crispy and let it set for at least 10 minutes before slicing to serve. Letting the meat rest before slicing allows the juices to stay inside of the meat.Remove your pork loin carefully from the roasting pan onto a cutting board. Slice, serve and enjoy!
