Equipment

  • 1 Medium bowl
  • 1 Paring knife
  • 1 wooden spoon

Ingredients

  • 3 medium ripe peaches peeled, pitted and chopped
  • 2 large ripe mangos chopped
  • 1/4 cup chopped sweet red pepper
  • 1/4 cup chopped purple onion
  • 2 Tbsp. fresh cilantro
  • 2 Tbsp. honey

Instructions

  • Peel and chop your ripe peaches into small pieces. Then chop the mangos into small pieces.
The mango pieces will be a little larger than the peach pieces because mangoes are larger. Add the chopped fruits into a medium size bowl and set aside.
  • Chop the sweet red pepper and then peel and chop the purple onion.
Add the chopped vegetables to the fruit mixture in the bowl. Finely chop the cilantro and add all of the vegetables to the fruit in the bowl.
  • Add the honey to the fruit and veggies in the bowl and stir with wooden spoon, until well blended. Cover with plastic wrap and refrigerate until ready to serve.

Notes

I do not recommend leaving the peeling on the peaches. Peach skin has a bit of a furry fuzzy peeling which can be eaten but won’t be especially good in this salsa recipe.

Pork chops cook on the grill in just a few minutes so we were feasting on this meal in under 30 minutes!

Our scrumptious menu includes; Grilled Bone-in pork chops topped with Honey Sweet Peach Mango Salsa,  a side of grilled corn on the cob and fresh squeezed lemonade.

Place the corn on the grill about 10 mintues ahead of the pork chops. Grilled Pork Chop Menu. Grilled pork chops with grilled corn on the cob and our Honey Sweet Peach Mango Salsa. #mangosalsa #grilling #porkchops #summerfood #grilling

If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest). If you like your chops a little more done, you can cook them to an internal temperature of 160 degrees. Either way, we’re only talking minutes!

Our Pork Chop rub is a mixture of instant coffee granules and brown sugar. Grilled Pork Chop Menu. Grilled pork chops with grilled corn on the cob and our Honey Sweet Peach Mango Salsa. #mangosalsa #grilling #porkchops #summerfood #grilling

Pork Chop Rub

While the grill was heating, I made a  quick rub for the pork chops using a mixture of about 2 Tbsp. of instant coffee and 1/4 cup of brown sugar which I rubbed generously on both sides of each pork chop.

The  corn on the cob went onto the grill a few minutes ahead of the pork chops. It cooks quickly so I like to place a piece of foil between the cob and the grill.

We intended to enjoy this meal on our deck but one of those famous summer pop up storms, popped up just as the pork chops were coming off the grill. We had to quickly take all of our tableware inside. The rain didn’t change how much we enjoyed this meal though.

Are you ready to fire up your grill and cook some pork chops?

  5. These pork chops look and sound so amazing! I love pork chops and during the summer I am always on the lookout for things to freshen them up for make them more SUMMERY! I don’t know why, but I tend to think of them as a fall/winter dish. Anyway, love the addition of the peaches. Perfect this time of year! Printing and passing this recipe to my husband!

    1. Hi Heather, I especially love that you’re passing the recipe to your hubby! Don’t miss the rub ingredients in my post. We really enjoyed the flavor it infused. We tend to cook pork chops more in the winter too ( I have a couple of other recipes on the blog) but when we do cook them in summer, it’s on the grill. They’re so good with the Sweet Peach Mango Salsa on top!

Pork combines so well with fruit. I have never tried a pork and mango pairing, but it looks like a delicious summer meal. I will have to give it a try real soon.

    1. Hi Chrishelle, be sure to use the honey for a little touch of sweet and more of a juicy texture which makes this salsa great for dipping a bite of the chop in! Thanks for visiting us.

  9. Yum. This looks amazing. We haven’t been grilling nearly as much as I thought we would be when the warmer weather rolled around. This is something I’d like to try though, yum!

    1. Hi Jeanine, I’ll admit we probably grill more in other seasons just because the heat here in Ga. get’s unbearable with the humidity. It was a nice day when we grilled this meal but just as the chops were coming off the grill, a summer storm popped up..perfect timing!

  14. I was recently telling someone that here in the south we grill year round. There’s nothing better than a grilled pork chop! Your peach and mango salsa sounds divine. I make a mango salsa, but I’ve never thought about adding peaches. Looks delish!

    1. Alli, isn’t that the truth, we probably grill more in fall and spring than summer just because of the extreme heat. We absolutely fire up the grill in the winter too! I hope you have a chance to make some salsa with peaches soon and share your recipe!
