Equipment
1 Medium bowl
1 Paring knife
1 wooden spoon
Ingredients
3medium ripe peachespeeled, pitted and chopped
2large ripe mangoschopped
1/4cupchopped sweet red pepper
1/4cupchopped purple onion
2Tbsp.fresh cilantro
2Tbsp.honey
Instructions
Peel and chop your ripe peaches into small pieces. Then chop the mangos into small pieces. The mango pieces will be a little larger than the peach pieces because mangoes are larger. Add the chopped fruits into a medium size bowl and set aside.
Chop the sweet red pepper and then peel and chop the purple onion. Add the chopped vegetables to the fruit mixture in the bowl. Finely chop the cilantro and add all of the vegetables to the fruit in the bowl.
Add the honey to the fruit and veggies in the bowl and stir with wooden spoon, until well blended. Cover with plastic wrap and refrigerate until ready to serve.
Notes
I do not recommend leaving the peeling on the peaches. Peach skin has a bit of a furry fuzzy peeling which can be eaten but won’t be especially good in this salsa recipe.
