October Meal Plan Week 1

Let me help you solve the dilemma of what to cook for supper. These October weekly meal plans are loaded with seven dinner ideas including side dishes and even desserts.

Recipes include casseroles, soups and Crockpot dishes for the Fall season. Plus apple recipes and pumpkin recipes.

About this meal plan

  • This menu plan will serve at least four folks. Some recipes will serve more than four depending on your portion sizes. You can always increase the recipe to feed more.
  • Some recipes are intended to create premeditated leftovers, like casseroles or large pots of soup. Leftovers save on the budget because they are great for lunch the next day.
  • Some recipes will call for ingredients that can be used in multiple recipes for the week. Such as a head of lettuce can be used to make side salads with a small amount also portioned for tacos.
  • Recipes in my weekly meal plans are typically not repeated more than once every three months.

1. White Beans and Ham Soup

Grocery List for soup

  • 1 lb. diced ham (found in the meat department, pre-packaged)
  • 2 cups dried Great Northern White Beans
  • 2 1/3 cups water
  • 1 Tbsp. paprika
  • 1 tsp. cumin
  • 1 1/2 Cups white onion, minced
  • 1 (28 oz.) container Vegetable Broth
  • 2 Bay leaves
  • 2 tsp salt
  • 1 tsp. pepper
  • 1/2 tsp. cayenne pepper (optional)
  • 3 Tbsp. minced garlic (optional)
  • 1 Tbsp. Butter (Stove Top recipe only)

Side dishes

2. Easy Homemade Three Meat Pizza

Grocery List

  • 1 (15 oz.) Jar Sun Dried Tomato Pasta Sauce
  • 1 pre-made Pizza crust
  • 2 Roma Tomatoes cut into bite size pieces
  • 1 lb. pkg. Baby Bella Mushrooms sliced
  • 1 lb. ground turkey, browned and drained
  • 8 oz. pkg. pre-cooked diced ham
  • 12 oz. pkg. microwave bacon, cooked and chopped
  • 16 oz. shredded Mozzarella cheese

Side Dishes

Make a small, simple side salad to go with your pizza.

3. Crockpot Corned Beef and Cabbage

Grocery List

  • 1 corned beef brisket about 4 pounds
  • 3 medium russet potatoes peeled and cut
  • 4 carrots sliced into bite size pieces
  • 1 head cabbage chopped or cut into wedges
  • Salt & Pepper to taste

No side dish needed because this is a complete meal.

4. Lemon Shrimp Penne Pasta Dinner with Broccoli

Grocery List

  • 3 Tbsp. extra virgin olive oil
  • ยผ cup. fresh lemon juice divided
  • 2 Tbsp. honey
  • 1 tsp. garlic powder
  • ยผ tsp. crushed red pepper flakes
  • 1 tsp Salt to taste
  • 1/4 tsp. black pepper
  • 1 12- oz. bag frozen broccoli florets
  • ยฝ medium red onion sliced
  • 1 16- oz. box penne pasta
  • 1 lbs. shrimp peeled and deveined, tail removed
  • 2 tsp. fresh lemon zest
  • ยฝ cup. Parmesan cheese freshly grated, divided
  • 2 Tbsp. fresh parsley leaves roughly chopped

Side dishes

Serve your favorite Italian bread with this easy Italian butter recipe on the side.

5 Grilled Rotisserie Chicken and Brie Sandwich

Grocery List

  • 4 ciabatta rolls, cut in half lengthwise
  • 1 Cup fresh arugula
  • ยฝ Cup Peach compote, recipe here (optional)
  • 1 lb. Rotisserie Chicken meat, sliced
  • 4 oz. Brie, rind removed and sliced thick

Side dishes

Serve your favorite potato chips on the side with a pickle spear.

6 Meat and Potato Casserole

Grocery List

  • 1 lb. ground beef cooked and drained
  • 1 can cream of mushroom soup
  • 1 15 oz. can diced potatoes, drained
  • 1/2 cup milk, 2% is fine
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup French fried onions

Side dishes

Serve your favorite green vegetables that come in a can such at Italian beans, like theseCut green beans like these, or Peas and Carrots like these. Dinner rolls are a must with this ground beef and potatoes casserole. We like these Hawaiian rolls the best.

7 Crockpot Lemon Pepper Wings

Grocery List

  • 1 2.5 lb. bag Party wings available in the meat department
  • 1 Can Coke
  • 1/4 Cup Lemon Pepper

Side dishes

This is a fun meal and great for game day. Serve any of these options on the side; Oven Baked French Fries, Homemade Creamy Cole Slaw, Best Ever Baked Beans and Grilled Cheese Fries.
