About the meal plan

  • This meal plan typically serves 4. Some recipes will serve more than four depending on your portion sizes. You can always increase the recipe to feed more.
  • Some recipes are intended to create premeditated leftovers, like casseroles or large pots of soup. Leftovers save on the budget because they are great for lunch the next day.
  • Some recipes will call for ingredients that can be used in multiple recipes for the week. Such as a head of lettuce can be used to make side salads with a small amount also portioned for tacos.
  • There are 7 dinner ideas each week, in no particular order.
  • Recipes in weekly meal plans are typically not repeated more than once every three months.

1. Cheerios Crusted Baked Chicken Thighs

Got a box of cereal in the cabinet? Cereal makes a nice flavorful coating for baked chicken. Cheerios Crust Chicken Thighs make a great weeknight dinner entrée.

2. Crockpot Flat Iron Steak and Mushroom Gravy

Five simple ingredients and about 3-4 hours in the Slow Cooker for this tender and tasty Flat Iron Steak recipe.

  • 1 Flat Iron Steak
  • 2 cans Beef Gravy I prefer the name brand
  • 1 pkg. Mushrooms, cut into pieces
  • 1 tsp. Salt
  • 1 tsp. Pepper

3. Baked Chicken and Cheese Quesadillas

You will love this easy recipe for crispy baked Chicken and Cheese Quesadillas with a creamy cheesy filling. Cook these easy quesadillas for lunch, snacks, dinner or game day.

  • 1/2 cup unsalted butter, melted
  • 8 large flour tortillas
  • 3 cups cooked chicken, shredded
  • 1 cup sour cream
  • 2 tbsp Taco seasoning
  • 4 cups Fiesta blend cheese, shredded

4. Taco Salad with Tortilla Bowls

A tasty meatless Taco Salad served in a Homemade Tortilla Bowl. Fresh vegetables paired with black beans and corn make this dish a favorite.

  • 1 Cup shredded Iceberg lettuce
  • 1/2 Cup Shredded Sharp Cheddar Cheese
  • 1 Cup drained and rinsed Low Sodium Black Beans (canned)
  • 1 Cup drained Sweet Corn (canned)
  • 8 oz, Sour Cream
  • 2 Roma Tomatoes chopped

5 Chicken and Cheese Eggs Skillet

Breakfast for supper is always a nice treat. This Chik fil A copycat recipe is layers of Chicken tenders with cheese eggs and cheese for a filling meal.

Ingredients

  • 16-20 frozen chicken tenders
  • 1/2 bag (16 oz.) frozen hash rounds
  • 5 eggs
  • 1 cup shredded Monterry Jack Cheese
  • salt and pepper to taste

Note: This is a good breakfast recipe for special occasions like birthdays and Christmas.

6. Minestrone Soup Gluten Free Version with Quinoa and White Beans

classic Minestrone soup recipe that has been adapted with white beans and quinoa for a gluten-free diet. Soup made from scratch is always the best. A Cook once eat twice meal. serve leftovers for lunch the next day.

  • 1 medium yellow onion, diced

  • ½ Cup white quinoa, rinsed and drained
  • 2 large bay leaves
  • 3” chunk Parmesan cheese rind
  • 1 tsp. Italian seasoning
  • 3 Cups baby spinach, roughly chopped
  • ¼ Cup fresh parsley, chopped
  • Salt and black pepper, to taste
  • 1-2 oz. Parmesan cheese, freshly grated
