    Ranch Chicken Sliders

    1. Crockpot Ranch Chicken Sliders

    Toss the chicken into the Crockpot, sprinkle Ranch seasoning over it, and a couple of hours later, you can shred the chicken and make sliders for dinner.

    Side Dishes for Sandwiches

    Potato chips or French fries and a salad.

    • 1 (1 oz.) packet of Mild Taco Seasoning
    • 1 pkg. (10 ct.) Soft Flour Shell Tortillas
    • 2 Tbsp.Oil
    • 2 cups Shredded Lettuce
    • 1 large ripe tomato, cut and chopped
    • 2 Medium ripe Avocados, scooped and chopped

    • 5 lbs. small red potatoes, washed. Do not cut up.

    • 1 (12 count pkg..) frozen corn-on-the-cob minis
    • 4 Tbsp. Old Bay seasoning

    • 2 T. fresh lime juice

    • 1 T. extra virgin olive oil
    • ¾ medium red onion, finely chopped
    • 2-3 large cloves of garlic, finely minced
    • Sea salt and black pepper, to taste
    • 1¼ lbs. ground beef
    • 1 large bag (11-14 oz.) tortilla chips
    • 1 8-oz. bag 4-cheese Mexican blend, finely shredded
    • 2 large green onions, green parts only, sliced thin
    • 1 6-oz. can black olives, chopped
    • 1 large jalapeño pepper, sliced thin

    This old fashioned recipe has gained popularity in recent years as quite a tasty meal for anytime.

    The only side dish needed is a pan of homemade cornbread.

    • 1 pound dry red kidney beans, sorted and rinsed
    • 1 (28 oz.) can diced tomatoes
    • 1 pound ham pieces
    • 1 pound andouille sausage, sliced into bite-size pieces
    • 1 cup fresh celery, chopped
    • 1 cup medium onion, chopped
    • 1 cup green bell pepper, chopped
    • 2 bay leaves
    • 2 cloves garlic, chopped
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano
    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • ½ teaspoon ground red (cayenne) pepper
    • 7 cups chicken stock or water
    • For serving the meal: Cooked white or brown rice. About 1/4 cup of uncooked rice per person
