Let me help you solve the dilemma of what to cook for supper. These October weekly meal plans are loaded with seven dinner ideas including side dishes and even desserts.

About this meal plan

  • This menu plan will serve at least four folks. Some recipes will serve more than four depending on your portion sizes. You can always increase the recipe to feed more.
  • Some recipes are intended to create premeditated leftovers, like casseroles or large pots of soup. Leftovers save on the budget because they are great for lunch the next day.
  • Some recipes will call for ingredients that can be used in multiple recipes for the week. Such as a head of lettuce can be used to make side salads with a small amount also portioned for tacos.
  • Recipes in my weekly meal plans are typically not repeated more than once every three months.

1. Easy Shrimp Tacos

Ingredients

  • 1 lb. medium shrimp peeled & deveined
  • 1 1 oz. packet of Mild Taco Seasoning
  • 1 pkg. 10 ct. Soft Flour Shell Tortillas
  • 2 Tbsp.Oil
  • 2 cups Shredded Lettuce
  • 1 large ripe tomato cut and chopped
  • 2 Medium ripe Avocados scooped and chopped

Side dishes

Serve your favorite tortilla chips with this easy Homemade Guacamole or Fresh Homemade Salsa.

2. Cheerios Crusted Baked Chicken Thighs

Grocery List

  • 4 boneless skinless chicken thighs
  • 1 Cup crushed Cheerios cereal (or any grain cereal)
  • Salt & Pepper to taste

Side Dishes

Italian Roasted Cauliflower Steaks Recipe and Roasted Broccoli Salad will round out this meal.

3. Baked BBQ Chicken Leg Quarters

Grocery List

  • 3 Chicken Leg Quarters
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 Tbsp. Smoked Paprika
  • 1 Cup BBQ Sauce

Great side dishes with BBQ chicken include; BBQ Baked Beans, Oven Baked Fries, or Baked sweet potatoes and Deviled eggs.

4. Homemade Mushroom Onion Burgers

Grocery List

Side dishes

Serve these Chili Cheese Tater Tots on the side.

5 Crockpot Cube Steak & Mushroom Gravy

Grocery List

  • 4 pieces Cube Steak
  • 2 Cans Mushroom gravy (I prefer Campbell’s)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Cup sliced fresh portobello mushrooms

Side dishes

Serve either rice or homemade mashed potatoes on the side with green beans.

6 Homemade Crab Stew Easy Recipe

Grocery List

  • 2 cans cream of potato soup
  • 2 cans cream of celery soup
  • 3-4 cans 6 oz. can of crabmeat, drained
  • 2 Tbsp. Old Bay Seasoning
  • 1 medium onion chopped optional
  • 1/2 stick butter or margarine
  • 4-6 cups milk

Side dishes

7 Grilled Bacon Pimento Cheese with Pepper Jelly Sandwich

Grocery List

  • Sandwich bread of your choice
  • Bacon slices, cooked and drained
  • Pepper Jelly, found here
  • Pimento cheese (recipe here)
  • Butter for grilling the bread

Side dishes

Serve your favorite potato chips and a pickle on the side.
