Grilled Bacon Pimento Cheese with Pepper Jelly Sandwich
Take a classic grilled cheese and turn it into an event by making it into a Grilled Bacon Pimento Cheese with Pepper Jelly Sandwich!

My husband and I recently spent a few days at Hilton Head S.C. While there we ‘experienced’ this sandwich at a local restaurant. They called it the “Ooey Gooey” on their menu. Of course this place made their own Pepper Jelly AND their own Pimento Cheese. We would not expect anything less. Let me tell ya, that sandwich was divine!
So true to form for us, we tried to replicate it after we came home. This is our own rendition.
Ingredients
For the Pimento Cheese Spread
- 1ยฝ cups mayonnaise Duke’s
- 1 4-oz. jar diced pimiento, drained
- 1 tsp. Worcestershire sauce
- ยผ tsp. onion powder
- โ tsp. ground red pepper
- 1 8-oz. block extra-sharp Cheddar cheese,shredded
- 1ย 8-oz. block sharp Cheddar cheese, shredded
For the Sandwiches
- Sandwich bread of your choice
- Bacon slices, cooked and drained
- Pepper Jelly, found here
- Pimento cheese (recipe here)
- Butter for grilling the bread
Directions
First you simply must make your own Pimento Cheese spread!ย My hubby’s recipe is delicious. Now let’s just be honest, you may not want to or have time to make your Pimento Cheese from scratch. We won’t tell. Pick up some from your favorite sandwich restaurant or even the grocery store.
To make the sandwich, spread the desired amount of the Pepper Jelly on one side of the bread. The Pepper Jelly adds a nice sweet and savory kick to the sandwich. Trust me, it’s good!
On top of that spread a generous amount of pimento cheese. Place the prepared bacon slices on top of the pimento cheese and grill in melted butter open faced until the bread is golden brown.
Place the two sides of the sandwich together and serve!
We used turkey bacon but you can use whichever you prefer. Even Microwave bacon works for this sandwich.
My favorite way to make grilled sandwiches is on my Iron Stovetop Griddle like this one. I also use the flat side for grilling hot dogs indoors on the stove top. This stove top griddle covers two burners and is easy to clean.
Just so you know though. Pimento Cheese is good for low carb diets. We also slather burgers with our Homemade Pimento Cheese and grill them for a delicious low carb meal.
