We are empty nesters so guess who needs to eat their vegetables in our home? Oh, we have our favorites and they show up on the dinner table but we could do better. Do you know how many ways it is possible to prepare your favorite vegetables? Yes, we do too. The reason we avoid the health food section of the grocery store is because we are convinced nothing over there tastes good. Am I right? We enjoyed exploring the freezers of the Live Naturally section in Kroger. There is actually quite a bit to choose from in Garden Lites products. We were pleasantly surprised.

We took home the Butternut Squash Bake and some Blueberry Oat muffins. My hubby showed me the Roasted Vegetable Bake and the Zucchini Souffle. He is a Zucchini lover so we’ll be trying that next along with the Chocolate muffins. I may even serve him those Chocolate muffins as a dessert. Who knew you could get your superfoods as a dessert?

The great thing about the muffins is they are delicious! You would never believe vegetables are the first ingredient in these muffins.

If your kids can make popcorn in the microwave, they can heat up their own after school snack. 10 seconds in the microwave is all it takes. My hubby is now packing them for his afternoon snack at the office.

I have been enjoying those delicious Blueberry Oat muffins for my own afternoon snack, especially on a busy work day when those vegetables help keep me going.

What did my husband say when he tasted those muffins? “No one would ever believe these have vegetables in them? This is delicious. I was not expecting these to taste so good.”

Who would have ever thought that you could actually enjoy a chocolate muffin made with 33% vegetables and it even tastes good? Thanks to Garden Lites, we can and those chocolate muffins are already on my grocery list.

The Live Naturally section at Kroger is no longer an area we avoid. The delicious tastes of Garden Lites is how they got us to eat more vegetables.

    Thanks so much for stopping by and for taking the time to leave such kind comments!! The adults did truly enjoy the circus!! I loved watching my 30+ children laugh and applaud all the acts but it did break my heart when my great niece, Maddie, asked her Mom if they could come back next year. It is so sad that there will not be a next year…….It is so sad to sad the end of an American institution….

  3. I want to get more nutrient rich vegetables and super foods in my family’s diet but it becomes a challenging task to make a way of vegetables from mouth to tummy. These muffins are really good option for a meal and as they are flavorful will be loved by everyone. 🙂

  5. This would be a good way to get kids to eat their veggies. I have yet to find a child who would say “no” to muffins! I will let my daughter know so she can get some of these to give her son for a snack. I will also share your post with my cousin who has three young daughters, the youngest is the pickiest eater of all. All she ever says at dinner time is, “what’s in this?”

  9. Every year we grow a huge garden and even a herb and fruit garden. Always canning and dehydrating to preserve for the whole year. If someone isn’t able to make or just doesn’t want to take the time and effort this would be a great alternative.
