Your Meal Plan for Week Five of April has seven dinner recipe ideas. It also includes a list of grocery ingredients for each entrée and side dish ideas.
We are quickly approaching Cinco de Mayo and Mother’s Day in May, so I have included a couple of recipes on the menu you can try out this week to cook for those occasions.

April Meal Plan Week 5
All recipes are linked at the bottom of this article. Side dish suggestions are not required; cook your favorite family sides. The grocery list for each entrée includes the ingredients required for that entrée.

1. Rotisserie Chicken Salad Recipe
A lighter meal made with a little bit of a cheat, store-bought Rotisserie Chicken. Only six simple ingredients to this easy dinner salad.
Side Dishes
Potato chips or these Oven Baked French Fries.
Grocery List for the entree
- 1 rotisserie chicken, pulled off the bone and chopped
- 1 Cup sweet, seedless grapes, sliced in half
- 1 Cup pecans chopped
- ½ cup chopped green onions (optional)
- 3.4 cup thinly sliced celery
- 1 Cup honey mustard dressing

2. Beef and Bean Burritos Easy Recipe
My recipe for Beef and Bean Burritos begins by cooking dried Pinto beans however, you can always substitute canned if you like. This meal is easy, frugal, and delicious.
Side Dish
Top your burritos with some fresh Homemade Salsa if you enjoy a good spicy kick. We also enjoy Chips with Homemade Guacamole on the side.
Grocery List
- 1 lb. dry Pinto beans
- 1 lb. ground beef, brown and drain
- 2 pkgs. Taco seasoning
- 1 can of diced tomatoes and green chilies
- ½ Cup sharp, shredded cheese
- 1 pkg. Flour tortillas
- Water

3. Crockpot Chicken and Gravy Recipe
A simple and easy dump-and-go Crockpot recipe for a kid-friendly dinner. Only a few simple ingredients make this a budget-friendly meal, too.
Side Dish
We enjoy having our Chicken and Gravy with either homemade mashed potatoes or rice. I also cook Green Beans or Italian beans on the side with rolls. This is my preferred brand for canned vegetables.
Grocery List
- 3-4 pieces boneless, skinless chicken (breast or thighs)
- 2 (.87 oz) packets of chicken gravy, like this
- 1 10.5 oz. can of cream of chicken soup
- 1/2 cup chicken broth or water
- salt and pepper to taste

4. Breakfast for Supper
Our Breakfast for Supper menu consists of these delectable Egg and Veggie Muffins, copycat McDonald’s Biscuits, and this easy recipe for No-Bake Triple Berry Parfait.
Side Dishes
This is a complete meal with Egg and Veggie muffins, biscuit, and a fruit parfait.
Grocery Lists
Egg and Veggie Muffins ingredients
- 1 ½ Cups chopped vegetables of your choice
- (Peppers, onions, tomatoes, spinach and mushrooms)
- 1/2 tsp. salt
- ¼ tsp pepper
- Optional: ½ cup shredded sharp cheddar cheese
- ¼ cup shredded mozzarella cheese
Copycat McDonald’s Biscuits
- 2 cups Bisquick mix
- 2/3 cup Buttermilk
- 2 tsp. granulated sugar
- 1/4 tsp. salt
- 2 Tbsp Butter, melted
Triple Berry Parfait Ingredients
- ¼ Cup raw almonds-for crust
- 3 pitted dates, roughly chopped-for crust
- ¼ Cup raw pecans-for crust
- ¼ tsp ground cinnamon-for crust
- 4 oz. cream cheese, room temperature
- 1 Cup Greek yogurt, plain and not fat-free
- 3 Tbsp. honey (or maple syrup)
- 1 tsp Pure vanilla extract
- 1 cup strawberries, chopped
- 1 Cup raspberries
- ½ Cup blueberries

5. Top Round Roast Beef Recipe
Here is a great recipe for Sunday dinner, special occasions, or just because you deserve it. Top Round Roast Beef is a simple and easy recipe with only four ingredients. It is cooked low and long in the oven for tender, tasty meat.
Side Dishes
Rice or Homemade mashed potatoes go perfectly with the gravy. Serve peas and carrots or your favorite green vegetable on the side.
Ingredients
- 2-3 lb. Top Round Beef Roast
- 3 (10-oz) Cans of beef gravy, like this
- 1 tsp Salt
- 1 tsp Pepper

6. Southern Fried Cabbage and Bacon Recipe
Cabbage lovers enjoy a bowl full of Fried Cabbage and Bacon. It is s simple meal ready to eat in under an hour. This is the kind of comfort food you can eat year-round.
Side Dish
There isn’t really a side I serve, but instead I cook some good dinner rolls, then slather the top with melted butter. Be sure to make a pitcher of Sweet Iced Tea too.
Grocery List
- 1 large head of Cabbage
- 6 slices of Thick bacon
- 1 tsp. Salt
- 1 tsp. Pepper

7. Fried Salmon Patties Recipe
These Fried Salmon Patties are thin and crispy. I fry in shallow oil so the salmon patties are not greasy. I have included instructions to easily debone canned salmon.
Side Dish
Homemade Creamy Cole slaw is a good side dish to serve with almost any fish recipe. Also serve cornbread or rolls.
Grocery List
- 1 can (14-15 oz.) Pink Salmon
- 1 egg
- Salt & Pepper to taste
- 1 tsp. Old Bay seasoning
- About 3 Tbsp. Self-rising flour
- ½ medium onion chopped (optional)
- ¼ cup vegetable oil for frying
