Rotisserie Chicken Salad Easy Recipe
This easy Rotisserie Chicken Salad recipe combines as few as six simple ingredients to create a most flavorful and satisfying salad. Serve this meal on crackers, on a bed of lettuce, or in a sandwich.
We love a good chicken salad at my house. My husband and I both make it, and we have done so with all types of cooked chicken. There are many different ways to make classic chicken salad, but this is my go-to recipe. My personal favorite is Rotisserie chicken because of the delicious flavor. I even bought a Rotisserie cooker, which is similar to this one.

Paired with our favorite chicken salad ingredients, you will make this recipe again and again. No matter if you buy the grocery deli Rotisserie chicken or make your own at home, there are many flavors to choose from.
Making chicken salad sandwiches is the best way to use up leftover chicken. When I boil a hen to make these Chicken and Dumplings, I always save aside enough meat to make a small chicken salad for us as a treat.

Ingredients
- 1 rotisserie chicken, pulled off the bone and chopped
- 1 Cup sweet seedless grapes, sliced in half
- 1 Cup pecans chopped
- ½ cup chopped green onions (optional)
- 3.4 cup thinly sliced celery
- 1 Cup honey mustard dressing

Rotisserie Chicken pulled off the bone, then chopped or pulled by hand. I used a store-bought Rotisserie chicken for this recipe. You can substitute canned chicken, boiled chicken, or baked chicken for this recipe. You want to stick with savory flavors. You can use leftover rotisserie chicken in this recipe.
Grapes are scrumptious in chicken salad. If you have ever enjoyed Fancy Nancy at Chicken Salad Chick, then you know just how good grapes are in a chicken salad recipe. I use sweet, seedless green grapes, but you can substitute sweet, seedless red grapes if you like. The Grapes make you think of a Waldorf Salad.
Pecans give this salad a nice crunch and add to the savory flavor. You can substitute walnuts if you like, but I do recommend pecans.
Green Onions, chopped, add a nice flavor and color to this salad. I do not recommend skipping this ingredient. I have made them optional only because some folks don’t care for onions. Leaving them out will change the flavor profile of these ingredients.
Celery is a nice complement to the flavor profile, plus it gives a little crunch. Slice your celery very thin so it isn’t overpowering in each bite.
Honey Mustard is my secret ingredient that gives this salad a sweet, tangy flavor. I prefer to use this brand of Honey Mustard, but you can use your desired brand if you like. I have not substituted mayonnaise, but if you do, please leave a comment and let me know how you like it.


Rotisserie Chicken Salad Recipe
Ingredients
- 1 rotisserie chicken, pulled off the bone and chopped
- 1 Cup sweet seedless grapes, sliced in half
- 1 Cup pecans chopped
- ½ cup chopped green onions (optional)
- 3.4 cup thinly sliced celery
- 1 Cup honey mustard dressing
Instructions
- Pull the chicken away from the bones
- Place chicken into a large bowl for mixing
- Pour the celery, green onions and pecans into the bowl with the chicken and stir gently to mix well.
- Now add the Honey Mustard a little at a time and stir. Keep adding Honey Mustard until the chicken salad is your desired consistency.
- Gently stir in the grapes to blend
- Refrigerate for at least 1 hour to allow flavors to marinade prior to serving.
- Serve and enjoy!
Rotisserie Chicken makes the most delicious chicken salad sandwiches any time of the year! We enjoyed our chicken salad sandwiches on wheat loaf bread, but you can use rolls of any type of sandwich bread you like.

How to store leftovers
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This recipe is best fresh. I do not recommend freezing this chicken salad.

This is a good meal to whip up in the summer when you want lighter food. Make this chicken salad early in the day, store it in the fridge, and serve for supper. You can make it a day ahead if you like.
Serve this recipe for a baby shower or a wedding shower, too. If you have a golf theme, chicken salad is served at the Master’s, so your guests will love this delicious recipe.

All of your sandwich salads look delish! My favorite (it’s gonna sound strange) is to core and slice an apple really thin and fill a whole wheat pita with arugula or spring mix, the apple slices and sesame ginger dressing. It’s been my fave for a while now.
