Rotisserie Chicken Salad Easy Recipe
Rotisserie Chicken makes the most delicious chicken salad sandwiches any time of the year! Paired with our favorite chicken salad ingredients, you will make this recipe again and again. No matter if you buy the grocery deli Rotisserie chicken or make your own at home, there are many flavors to choose from.
Making chicken salad sandwiches is in my humble opinion the best way to use up leftover chicken assuming you actually have some leftover chicken. Sometimes I buy a Rotisserie chicken just to make this delicious sandwich.
There are folks out there who do not eat mayonnaise. Oh gasp! I’ve found some interesting substitute’s for mayonnaise including pulverized avocados! I’m sharing a Chicken Salad recipe today using Honey Mustard instead of mayonnaise which is super yummy and a family favorite at our house.
This Chicken Salad recipe begins with chopped rotisserie chicken and I cheated and bought one at the grocery store deli. We served our chicken salad sandwiches on wheat loaf bread but you can use rolls of any type you like.

We all have our favorite sandwich salads. The recipes and preparation methods are quite varied. One of the great things about sandwich salads is the amount of variety!
Pecan Honey Mustard Rotisserie Chicken Salad

Rotisserie Chicken Salad
Ingredients
- 1 rotisserie chicken, pulled off the bone and chopped
- 1 Cup sweet seedless grapes, sliced in half
- 1 Cup pecans chopped
- ½ cup chopped green onions (optional)
- 3.4 cup thinly sliced celery
- 1 Cup honey mustard dressing
Instructions
- Pull the chicken away from the bones
- Place chicken into a large bowl for mixing
- Pour the celery, green onions and pecans into the bowl with the chicken and stir gently to mix well.
- Now add the Honey Mustard a little at a time and stir. Keep adding Honey Mustard until the chicken salad is your desired consistency.
- Gently stir in the grapes to blend
- Refrigerate for at least 1 hour to allow flavors to marinade prior to serving.
- Serve and enjoy!

All of your sandwich salads look delish! My favorite (it’s gonna sound strange) is to core and slice an apple really thin and fill a whole wheat pita with arugula or spring mix, the apple slices and sesame ginger dressing. It’s been my fave for a while now.
Yum!!! The greek yogurt egg salad sandwich looks yummy! Sandwiches in the summer are a favorite of ours!
