A Foil Pack Chicken Dinner is one of the easiest meals you could possibly make in the kitchen which includes a variety of fresh vegetables. It’s a one dish dinner, easy clean up meal.

How To Fold The Foil

There is no magic formula for folding the foil. The goal is to contain and cover the food during the cooking process. 

I use two long pieces of heavy duty foil. I lay one piece of foil out on the counter and the lay the second piece across it like a cross. Criss-cross the foil.

I highly recommend using a good name brand foil for Campfire Foil Packet dinners. The less expensive brands are too thin.

Adding the meat and vegetables

Spray the foil with non-stick spray.

Season your meat and vegetables first.

Then place the ingredients into the center as shown above. Meat on the bottom so it’s most close to the heat source. Never use thick cuts of meat in a foil pack dinner because it will take too long to get done in comparison to the vegetables.

When you close up the foil, the vegetables will pile on top of the meat.

Bring the top foil up to join the two ends taking care to keep the sides up by shaping.

Now bring up the other piece doing the same and fold the tops down together but not tight. You will want to have room for air to circulate during cooking time.

Oven Baked Foil Pack Dinners

Place your foil packs on a pan before setting them into the oven. I always cook my foil packet dinners in the oven at 350° and check them at 30 minutes. Most foil packet dinners take closer to 45 minutes to cook in the oven and on the grill.

Grilled Foil Pack Dinners

You can place your foil packets directly onto the grill as shown. Cook time depends on exactly what you are cooking in your foil packs and how hot your grill gets. Generally speaking, with chicken foil pack dinners, begin checking after about 35 minutes for boneless chicken. Bone-in chicken will take longer. 

Campfire Foil Pack Dinners

If campfire foil pack meals are cooked on a grill the same information applies as when grilling at home.

If you are cooking over an open flame in a fire pit, I recommend you use an iron kettle or large iron skillet and place the foil packs inside. Cook time depends on the heat and exactly what is inside your foil pack meals. Use a meat thermometer to check the meat.

Yams

I love yams just about any way you can cook them. It made perfect sense to me that I needed to experiment with adding them to one of our favorite summer dinners. 

Yams cook slow so it’s important to slice them thin.

I seasoned my fresh thin sliced yams separate by tossing them in a Ziploc back with a little cinnamon and brown sugar.

The broccoli actually cooks fast so I recommend placing the broccoli in the foil packet last so that it’s on top. 

Mushrooms and Onions

You can add mushrooms and onions to almost any foil pack dinner. They pair well with most meats. Of course these veggies are optional!

Broccoli, Yams & Thighs Foil Packet Dinner

I prefer to place my foil packet dinner onto a plate. I never eat the whole thing. I usually save some for lunch the next day. I am a self appointed leftover’s for lunch queen!

My hubby enjoys eating his foil packet dinner right out of the foil. He loves balling up the foil and tossing it into the trash so he can proclaim that he has cleaned the kitchen after dinner.

Chicken And Broccoli Foil Pack Dinner

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Easy chicken recipe for Foil Pack Dinner with Chicken, Broccoli and Yams baked in the oven.

Ingredients

  • 4 Boneless, skinless chicken thighs
  • 1/2 cup Yams, peeled and sliced into thin rounds
  • 1/2 cup Broccoli
  • 1/2 cup Mushrooms, whole or sliced
  • 1 small onion, peeled and sliced
  • Dash of Salt
  • Dash of Pepper
  • 3 Tbsp. Brown Sugar
  • 1/2 tsp Cinnamon

Instructions

  1. Toss the peeled and cut yams in a Ziploc bag with brown sugar and cinnamon mixture to coat well.
  2. Lay two pieces of foil out across one another like a cross.
  3. Season the meat and vegetables with salt and pepper
  4. Layer the meat and vegetables onto the foil, beginning with the meat, followed by the yam and ending with the broccoli on top
  5. Close the foil to seal, leaving space around the food for air to circulate during cooking time.
  6. Cook on grill or in oven at 350° for about 35-45 minutes or until chicken is done.
  7. Remove from heat and let rest a few minutes before opening.
  8. Always be very careful when opening a foil pack meal as the heat and steam will rise quickly.
  9. Serve straight from the foil pack by setting in on a dinner plate or carefully remove the food onto a dinner plate from the foil packet.
  10. Enjoy!

Notes

This recipe is for 2. Increase meat and vegetables for more folks.

SEASONING OPTIONS:

You can use any seasoning you choose for your vegetables and chicken. Toss the chicken with a Ranch dressing mix for a yummy flavor.

LIPTON Soup mixes are a good option for tossing the meat and veggies in for foil pack meals
