Menu Plan #48 Homemade Meatballs

Week #48 of our Menu Plan is a little something different every night.

We stretch our homemade meatballs into two nights for two completely different meals.

Taco Soup

We begin the week with Crockpot Taco soup with Black Beans. Only 7 ingredients for some stick to the ribs goodness. We serve tortilla chips with our Taco Soup and drizzle the top with shredded cheddar cheese then add a dollop of sour cream.

Tuesday brings my Easy Swedish Meatballs recipe using homemade meatballs which we are going to stretch into two meals. Cook once, eat twice, it’s how we manage our week better and save on the grocery budget too.

So when you make the meatballs from scratch, make a double batch and freeze half. I use these freezer bags. Those will be our Meatball Hoagie sandwiches tomorrow night.

If I am going to be making meatballs from scratch, you best bet there will be sub sandwiches on the menu! We usually have these the night after we have Swedish meatballs. Only because I make a double batch of meatballs for the freezer. My hubby loves meatball week at our house.

Add the frozen meatballs to a large skillet, and cook on medium turning often. When they are almost done, cover them with your favorite BBQ Sauce and let them simmer with the lid on until they are completely cooked through. Serve and enjoy! Chips and pickles make good side dishes with Meatball Hoagie sandwiches.

Glazed Baked Spam served on a bed of rice makes a simple and easy meal to get on the table late in the week. I pull this recipe out when I have had a busy week and I just need something easy for a weeknight dinner, plus this one is budget friendly.

Apple Stuffed Pork Tenderloin . Baked in a baking bag in the oven for a tender juicy weeknight meal. The apples add flavor to the meat and serve as one of the side dishes at the same time. Serve this meal with cabbage for a yummy meat and vegetable combination. This is a fiber filled meal. Apples, cabbage and pork tenderloin go together like peanut butter and jelly in this recipe!
