1. Easy Rotisserie Chicken & Brie Sandwich
Chicken and Brie Sandwich with a fruit spread is the sort of lunch item you would expect to find on a gourmet restaurant menu, over-priced but so worth it. Now you can make your own at home with no special skills, just this easy recipe.
Grocery List for entrée
- 4 ciabatta rolls, cut in half lengthwise
- 1 Cup fresh arugula
- ½ Cup Peach compote, recipe here
- 1 lb. Rotisserie Chicken meat, sliced
- 4 oz. Brie, rind removed and sliced thick

2. Classic Caesar Salad Recipe
Salads in the summer are like pumpkin in the fall. Try this delicious homemade Caesar salad recipe, dressing included, for a hearty but light dinner idea.
Grocery List
For the Dressing
- ½ Cup mayonnaise
- ½ Cup Greek yogurt
- ½ Tbsp fresh lemon juice
- 1-2 large cloves of garlic, minced
- 1 tsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- 1 tsp. anchovy paste
- Sea salt and black pepper, to taste
- ¼ Cup Parmesan cheese, freshly grated
- ¼ Cup light olive oil
For the croutons
- 1 Tbsp. unsalted butter
- 4 slices of French or Italian bread, cubed or torn
- ½ tsp. garlic powder
- Sea salt and black pepper, to taste
For the Salad
- 1 large head Romaine lettuce, cleaned, chopped, and dried completely
- ½ Cup shaved Parmesan cheese

3. Cheesy Baked Crusted Tilapia
A quick and easy dinner entrée ready to eat in under 30 minutes. This recipe for Cheesy Baked Tilapia has a tender, tasty crust.

- ½ Cup self-rising flour
- 2 eggs beaten
- 2 Cups Cheese Doodles or Cheese Puffs, finely crushed
- 1 Cup dried bread crumbs
- 2 tsp. dried parsley flakes
- 1 Tbsp. Old Bay seasoning
- 4 Tilapia fillets

4. Foil Pack Chicken and Broccoli Dinner
This easy Foil Pack dinner can be baked in the oven or cooked on the grill. A tasty combination of chicken with yams and broccoli.

- 4 Boneless, skinless chicken thighs
- 1/2 cup Yams, peeled and sliced into thin rounds
- 1/2 cup Broccoli
- 1/2 cup Mushrooms, whole or sliced

- 2 Tbsp. Kosher salt
- 6-8 large fresh basil leaves, chopped
- 2 stems fresh rosemary, leaves stripped from stems and crushed
- 2 Tbsp. fresh thyme leaves, crushed with fingers
- 3 cloves garlic, chopped
- 1 Tbsp. Sea salt

7 Stovetop Grilled Easy Chicken Parmigiana
If you are looking for a good cheat recipe that doesn’t leave out flavor, this is it. This Chicken parm is grilled on a stovetop griddle and finished quickly with few ingredients. I use chicken thighs because they come out tender and juicy.

- 2 packs of dry Italian dressing mix
