Sausage and Potato Foil Packets Recipe
This foil packet dinner comes together quickly. The flavors marinate while it is cooking for a delicious, easy meal. The best part for me is easy cleanup.

Tips for cooking
This foil pack recipe can be cooked in the oven or on the grill. Both instructions are included in the printable recipe card below.
Ingredients
- 1 (12 oz.) pkg of Smoked sausage, cut into bite-sized pieces
- 1 1/2 lbs.. fresh potatoes, cut into small bite-sized pieces
- About 1 lb. of fresh green beans with the ends snipped off
- 4 small ears of corn on the cob (I use frozen)
- 2 Tbps of Old Bay seasoning
- 2 Tbsp. of butter
Sausage and Potato Foil Packet Recipe
Equipment
- Aluminum foil
- Large Ziploc bag
- Large baking pan
Ingredients
- 2 12 oz. pkgs. of Smoked sausage
- 1 1/2 lbs. potatoes
- 1 lb. fresh green beans
- 4 small Ears of corn on the cob I use frozen
- 2 tbsp of Old Bay seasoning
- 2 tbsp of butter, divided
Instructions
- Preheat the oven to 400°
- Lay out the foil on the counter. Tear off large pieces of foil and lay one piece on top of the other like an "X". They will overlap in the center only. You will use all four ends to close the foil packet.Do this four times to make four foil packets.Spray the center of the foil with non-stick spray.
- Peel the potatoes and cut into bite-sized pieces. Rinse and drain in a colander. While the potatoes are draining, prepare the green beans.
- Snip the ends off the green beans. Rinse and drain.
- Cut the sausage into bite-sized pieces like coins. Set aside.
- Place all of the potatoes into a large Ziploc bag. Sprinkle the Old Bay seasoning into the bag, Seal and shake, shake, shake. Then divide the potatoes equally among each of the four foil packets you have laid out.Do not throw away the Ziploc bag just yet. We are going to use it again.
- Next, add the green beans to the same Ziploc bag and shake. Then divide the green beans among the four foil packs.
- Now place the cut up sausage equally among the four foil packs.
- Place one small ear of corn on the cob on top of everything in each foil packet. Place a pat of butter on top of each ear of corn.
- Seal each foil packet by bringing up the long ends of the foil and folding them down.Place all four foil packets onto a large baking sheet. Place the baking sheet into the preheat oven on the center rack. Bake for about 35-45 minutes. You can remove from the oven at about the 30 minute mark and check one. Poke a fork into the potatoes to see if they are tender. They will take the longest to cook in this meal. Once the potatoes are tender, it is ready to eat.
Grilling Instructions
- Preheat your grill. Place the foil packets onto the upper rack. Close the grill and cook for about 35 to 45 minutes. Check one packet carefully at about the 30 minute mark. Grill temperatures can be difficult to maintain, so cooking times may vary depending on your grill. It is important to keep the lid closed during cooking time.
