Cucumber Tomato Salad Ingredients
This delicious and easy salad is made with fresh vegetables from your garden, farmer’s market, or grocery store produce section.
Salad Ingredients
Cucumbers: Seedless English cucumbers are preferred, however, if you want to use cucumbers from your garden, go ahead. Be sure to scrape out the seeds before chopping.
Tomatoes: Nice fresh firm cherry tomatoes are great in this salad. You can also use grape tomatoes Plum or Roma tomatoes. Be sure to scrape out as many of the seeds as possible before chopping.
Purple onion: Purple onions are perfect for both their flavor and the color they add to this cucumber tomato feta salad. However, if you prefer sweet onions, red onions, or no onions, go for it. That is the great thing about recipes, you can make them your own.
Feta: Make life easy and buy crumbled feta in the dairy section of the grocery store. If you love adventure and flavor, get the Sun Dried Tomato Feta. Remember that feta is salty so no need to add too much salt to the salad.

Dressing Ingredients
Save this simple dressing recipe to use on a pasta salad too. The lemon juice can be omitted if you like.
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons dill, chopped

Directions
Step 1 Make the dressing
Place all of the dressing ingredients into a small bowl. Stir using a whisk until the dressing is well blended and then set aside.

Step 2 Make the salad
Add the chopped vegetables into a pretty serving bowl. Toss gently to blend. Sprinkle with the crumbled feta. Now pour your dressing over and toss to coat all of the fresh produce well to make a tasty salad.
Best served immediately while all of the vegetables are nice and crisp
