Greek Cucumber Salad Recipe
A light and refreshing Cucumber Salad with zesty flavors make a nice change of pace for a summer salad. The combination of fresh cucumbers, tomato and feta paired with a zesty lemon vinaigrette creates a light and flavorful side dish.
The first time I tasted a Greek Cucumber Salad, I was in Biloxi, Mississippi while my husband was doing job training there for a month. We visited a little local Greek restaurant that had been recommended to us. We wound up eating there multiple times before we went home.

Ingredients
Cucumbers: I use English cucumbers but you can substitute cucumbers from your garden or Farmer’s market if you like. The cucumber adds a nice crunchy bite and is perfectly paired with tomatoes. You can peel the skin off if you like or leave it on in which case please wash them using a vegetable brush under running water at the kitchen sink.
Tomatoes: Roma tomatoes are great for salads because of their pear shape which allows you to cut them into nice chunks that don’t fall apart as easy. You can certainly substitute any type of tomato you prefer as long as you cut them into chunks.
Olives: While my recipe calls for Kalamata olives, it isn’t written in stone. If you love black olives, substitute those.
Red Onion: I’m a bit of a stickler for the red onion. Their flavor isn’t as strong as a white onion and they add such a pretty color to the salad. If you need to cut back, then use a small onion rather than a medium one. Cut them into nice little bite size pieces which adds color throughout the salad.
Feta: Feta is such a key ingredient in a Greek Cucumber salad. It adds that tangy zest that pairs so well with the dressing. If I was going to change anything about the Feta, it would be to add even more!
For the salad
- 2 English cucumbers, quartered lengthwise and sliced
- 4 Roma tomatoes, quartered lengthwise and sliced
- ⅓ cup sliced kalamata olives
- 1 medium red onion sliced
- ½ cup crumbled feta cheese
Lemon Vinaigrette Salad Dressing
- 1/4 cup Robust olive oil
- 1 Lemon, juiced
- 2 teaspoons of dried oregano
- 2 cloves of garlic, minced
- 1/4 teaspoon of black pepper
- 1/2 teaspoon salt

Directions
In a small bowl, combine all of the Lemon Vinaigrette salad dressing ingredients and whisk together until well blended. Set aside
In a large bowl, combine all of the prepared salad ingredients. Pour the dressing over top and toss to coat all of the salad ingredients well. Serve and enjoy!

Can you make this salad ahead?
Yes, but don’t add the dressing to this cucumber tomato salad until shortly before you are ready to serve. If the veggies sit in the dressing too long, they won’t be as nice and crisp.
Can I use a different salad dressing?
Yes, you can. Use whatever salad dressing you like on this tomato cucumber salad. Most any vinaigrette dressing will be good on this salad. If you don’t mind crossing Italian with Greek, use my copycat recipe for Olive Garden dressing.

- 1 Medium salad bowl
- 1 Whisk
- Wood spoon for tossing
Ingredients
For the Salad
- 2 English cucumbers, quartered lengthwise and sliced

- 1 Juice of Lemon
- 2 tsp. dried Oregano
- 2 cloves garlic, minced
- ¼ tsp. black pepper
- ½ tsp. salt
Instructions
- In a small bowl, combine all of the Lemon Vinaigrette salad dressing ingredients and whisk together until well blended. Set aside
- Chop and prepare the cucumbers and tomatoes.
- In a large bowl, combine all of the prepared salad ingredients. Pour the dressing over top and toss to coat all of the salad ingredients well. Serve and enjoy!
