Bundt Pan Chicken Recipe

A savory roast chicken recipe one-pan dinner made easy with a simple kitchen hack. Seasoned chicken juice flavors the vegetables underneath while the chicken is roasting.

You don’t need a fancy rotisserie oven to make juicy flavorful roasted chicken at home. Your chicken will turn out moist and the vegetables beneath it will be loaded with flavor from the chicken juices by using your Bundt pan for roasting.

Roasted Chicken and Vegetables

Ingredients

  • 1 (3 to 4 pound) whole chicken
  • 1 ยฝ pounds small yellow potatoes, cut into chunks
  • 1 sweet onion, cut into wedges
  • 1 pound of baby carrots
  • ยฝ cup (1 stick) unsalted butter, divided
  • ยฝ teaspoon salt
  • ยฝ teaspoon paprika
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon dried oregano

Directions

You can perfectly roast a chicken using your bundt pan as a stand. While the chicken is roasting, the vegetables in the bottom of the pan are filled with flavor from the chicken.

Step 1

Prepare your Bundt pan by covering the center of the pan opening with a piece of aluminum foil. Then spray the inside of the Bundt pan with non-stick cooking spray. Place the top oven rack onto the center position and preheat the oven to 425ยฐ.

Step 2

In a small bowl, combine the salt, paprika, black pepper, garlic powder, onion powder, and dried oregano. Then divide the seasoning blend in half between two small bowls and set aside.

Step 3

Place the cut-up vegetables into the bottom of the Bundt pan.

Step 4

Place 4 tablespoons of butter in a microwave-safe bowl and heat until melted. Pour the melted butter over the vegetables in the Bundt pan and toss to coat.

Now sprinkle half of the seasoning over the vegetables in the Bundt pan and toss the vegetables to coat well. The melted butter will help the seasonings stick to the veggies.

NOTE

You can place the vegetables in a separate bowl and toss them to coat with melted butter then season and then place them into the Bundt pan. However, I have skipped the separate bowl in favor of fewer things to wash in the kitchen.

Step 5

Place the other half of the seasoning into a bowl with the remaining butter. Using a fork, combine the seasoning with the butter until well blended. Set aside.

Step 6

Pat the chicken dry with paper towels and rub the chicken all over with the herb butter. Seat the chicken over the tube hole that you covered with foil on the Bundt pan.

Set the Bundt pan in the oven and bake for 60 to 70 minutes. Check the chicken with a meat thermometer like this one. Chicken is done when it reaches an internal temperature of 165 degrees.

Step 7

Remove the golden-baked chicken from the oven. Allow it to set for about 10 so the juices will stay inside the chicken.

Then carefully remove the roasted chicken to a platter using large tongs and a carving fork. Spoon the vegetables around it for a nice presentation.
