Equipment

  • 1 12" Bundt Pan

Ingredients

  • 1 3-4 lb. whole chicken
  • 1.5 lb. small yellow potatoes, cut into chunks (like Yukon gold)
  • 1 sweet onion, cut into large wedges
  • 1 lb. baby carrots
  • 1 stick unsalted butter, divided
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. dried oregano

Instructions

  • Prepare your Bundt pan by covering the center of the pan opening with a piece of aluminum foil. Then spray the inside of the Bundt pan with non-stick cooking spray. Place the top oven rack onto the center position and preheat the oven to 425°.
  • In a small bowl, combine the salt, paprika, black pepper, garlic powder, onion powder, and dried oregano. Then divide the seasoning blend in half between two small bowls and set aside.
  • Place the cut-up vegetables into the bottom of the Bundt pan.
  • Place 4 tablespoons of butter in a microwave-safe bowl and heat until melted. Pour the melted butter over the vegetables in the Bundt pan and toss to coat.
  • Now sprinkle half of the seasoning over the vegetables in the Bundt pan and toss the vegetables to coat well. The melted butter will help the seasonings stick to the veggies.
  • Place the other half of the seasoning into a bowl with the remaining butter. Using a fork, combine the seasoning with the butter until well blended. Set aside.
  • Pat the chicken dry with paper towels and rub the chicken all over with the herb butter. Seat the chicken over the tube hole that you covered with foil on the Bundt pan.
  • Set the Bundt pan in the oven and bake for 60 to 70 minutes. Check the chicken with a meat thermometer. Chicken is done when it reaches an internal temperature of 165 degrees.
  • Remove the golden-baked chicken from the oven. Allow it to set for about 10 so the juices will stay inside the chicken.
  • Then carefully remove the roasted chicken to a platter using large tongs and a carving fork. Spoon the vegetables around it for a nice presentation. Serve and enjoy!

Notes

You can place the vegetables in a separate bowl and toss them to coat with melted butter then season and then place them into the Bundt pan. However, I have skipped the separate bowl in favor of fewer things to wash in the kitchen.
