BOW TIE PASTA AKA FARFALLE

Bow Tie pasta is also known as Farfalle makes this pasta dish attractive and fun to eat. Don’t you think the Bowties are more fun than just plain old elbow macaroni? Of course, if you are in a pinch and elbow is all you have on hand, use it!

SALT CURED LEMONS!

The secret ingredient here is the addition of salt-cured lemons to this recipe which really gives it some extra pop of flavor. Of course, the lemons are optional but trust me on this, you will want to add the salt-cured lemons! Salt-cured lemons are super easy to make using Himalayan Salt Blocks.

Do Not add extra salt to the salad without tasting first! The briny cured lemons are plenty intense on their own.

  • Dried Cranberries
  • Greek yogurt
  • Garlic
  • Olive Oil

Broccoli & Bow Tie Pasta with Lemon Garlic Dressing

Broccoli and Bow Tie Pasta Dish with Homemade Lemon Garlic Dressing. This lighter dish is good for a lunch salad, side dish and even for pot luck dinners. Can be made up to two days ahead and refrigerated.

Ingredients

  • SALAD:
  • 1 cup Bow-Tie Pasta aka Farfalle cooked according to package directions
  • 1 head broccoli, florets only, stems removed
  • 1 red bell pepper, core removed and cut into thin slices
  • 1 yellow bell pepper, core removed and cut into thin slices
  • 4 sliced preserved, salt-cured lemon, finely chopped including rinds, OPTIONAL (see article for directions)
  • 1/4 cup dried cranberries [optional]
  • DRESSING:
  • 1 cup traditional Greek yogurt (full fat)
  • 2 cloves garlic, finely minced
  • 2 Tbsp. high-quality extra virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. fresh lemon zest
  • salt and black pepper, to taste

Instructions

MAKE THE DRESSING FIRST

In a glass bowl, combine yogurt, garlic, olive oil, lemon
juice, and zest with a fork or whisk. Season with salt and pepper to taste.

Set the dressing aside or refrigerate while you make the salad.

SALAD INSTRUCTIONS

Place broccoli florets into a microwave safe bowl with 1 Tbsp.
water, cover and microwave until slightly tender, about 4 or 5 minutes.
Microwave times vary, so check after 3 minutes and adjust time accordingly.

Set cooked broccoli aside to cool completely.

In a large bowl, combine cooked pasta, steamed broccoli, red
and yellow pepper, cured lemon and cranberries. Toss to mix well.

Drizzle with your desired amount of yogurt dressing and toss again until thoroughly combined and serve.

Can be refrigerated up to two days.
