Fresh Green Bean Salad With Feta

Summer BBQ’s mean those farm fresh vegetables will make their way into our tummies too! What better way than a delicious fresh veggie summer salad!
FYI, you can find fresh green beans in the produce department at your grocery store most any time of the year. This Green Bean Salad makes a good side dish for the holidays too and the colors are perfect on the table.
Our Green Bean salad is full of favorite summer flavors like fresh from the vine green beans and grape tomatoes along with basil and parsley. Then we add a nice salty bite by adding crumbled feta!

Begin by rinsing your fresh green beans in a colander under cool running water. I like to drain mine on paper toweling on the counter. You can pat them dry with paper toweling as well.
HOW TO SNIP THE ENDS OF THE GREEN BEANS
Snipping the ends off with kitchen shears is quick and easy but we don’t all own a pair of kitchen shears.
Use This Trick
Line the ends of the green beans up on a cutting board so the ends are all even and flush. Use a nice sharp knife to cut off the tip ends. Now do the same with the other end of the green beans. Easy peasy, right!
CUT THE BEANS IN HALF
While you have the knife out or your kitchen shears, cut the beans in half. They will cook easier plus whole green beans are not perfect for a salad. They are great for a side dish cooked whole but cut green beans are easier to eat when in a salad.

Next you will rinse your cute little grape tomatoes also. Drain them on paper toweling well. Cut some in half and leave some whole for this recipe.
USE THE RIGHT BOWL
Acidic foods like tomatoes and vinegar we use for the dressing, can cause a negative reaction in a metal bowl. That reaction may create a metallic taste or cause the dish to lose it’s flavor.
Use a pretty glass, ceramic or wooden bowl to serve your summer salad.

This Fresh Green Bean Salad is ready in about 20 minutes!
VARIATIONS
Add any of the following ingredients for a nice variation. Some will turn this summer salad into a meal by itself!
- Bacon
- Roasted Pecans or Walnuts
- Sliced thin Red Onions
- Olives
- Sun Dried Tomatoes
- Pine Nuts
- Slivered Almonds
- Chives
- Cauliflower


Green Bean Salad With Feta
This summer salad can be made farm to table using farm fresh vegetables and herbs. The salty flavor of the feta adds an extra pop of yum in your mouth. Ready in about 20 minutes. Serve as the main course on a weeknight or as a side dish for a summer BBQ.
Ingredients
- 1½ lbs. fresh green beans, tips removed and cut in half
- 1 pint grape tomatoes, washed and cut in half
- 1 Tbsp. fresh basil leaves, finely chopped
- 1 Tbsp. fresh parsley leaves, finely chopped
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. sherry vinegar
- 1 Cup Feta cheese, crumbled
- Sea salt and black pepper, to taste
Instructions
Over high heat, bring a large pot of salted water
to a boil.
Add green beans and cook until crisp tender, approximately 3-4 minutes.
Drain the green beans and then transfer to a large bowl of ice water
to prevent further cooking.
Remove green beans from the ice bath and pat dry.
Add to a large glass or plastic bowl. Do not use metal as it will react with the dressing and affect the flavor.
Add the tomatoes, basil, parsley, olive oil, and vinegar to the bowl and toss to combine. Season with salt and pepper, to taste.
Gently fold in crumbled Feta cheese and serve
immediately.
This Green Bean & Feta Salad is also good chilled and served cold.
