Crockpot Broccoli, Sausage & Pasta Casserole
This Crockpot recipe for Cheesy Broccoli and Sausage Pasta Casserole recipe is a new favorite in our home! Even the kids love this dish.
Broccoli, Sausage, and Pasta pair well for a delicious casserole dinner with melted cheese for creamy deliciousness. The best part for me is that it’s a Crockpot recipe.
Before I tell you who enjoyed this easy Crockpot casserole, I have to tell you why. Our air conditioner unit quit working in our home. We knew it was nearing the end and were hoping it would not quit during the heat of summer. It quit during our unseasonably warm spring.
The day they installed our new air unit was actually a very nice spring day. So I served the crew their Broccoli & Sausage Macaroni Casserole on our deck.
I’m happy to report that the men in the crew cleaned their plates and shared rave reviews of the sausage and broccoli casserole. My hubby went back for seconds and suggested we should use this recipe for pot luck dinners in the future because everyone will love it!

I like to prepare a meal for the men who are working in our home just to show some southern hospitality. I cooked a huge BBQ dinner for the floor crew who replaced all of our floorings several years ago.
My new recipe has only 7 ingredients and it’s loaded with flavor.
There is no salt added because I took advantage of the bold flavors in the sausage and the seasoning in the tomatoes.
It’s a Crockpot recipe and that is a huge time saver in my busy day.
If you have a picky eater who will only eat broccoli with it is slathered with cheese, this recipe is for you.

The grandkids love this cheesy broccoli and sausage casserole so that makes me happy. They even enjoy the broccoli hugged in melted creamy cheese.
Ingredients
- 1 pkg. Smoked Sausage Link’s cut into bite size pieces
- 1 Cup fresh broccoli chopped
- 1 Can (15 oz.) Diced tomatoes (basil, garlic & oregano)
- 3 Cups shredded sharp cheese
- 1 (13 oz.) can evaporated milk
- 1 Cup 2% milk
- 1 pkg. (1 lb.) macaroni noodles
Directions
Step 1
Boil and drain pasta according to package directions.
Step 2
While the noodles are boiling, chop the sausage into bite-size pieces and set aside.
Step 3
Chop the broccoli into bite-size pieces then rinse and drain in a colander. Set aside.
Step 4
Set the Crockpot temperature to low and pour the cooked macaroni into it first. Then stir in the broccoli florets, sausage, and undrained tomatoes.
Fold in the milk and cheese.

Step 5
Cover the Crockpot with the lid and allow to cook on low for about 2 hours.
Serve and enjoy!
Optional ingredients
Spicy Italian sausage, Italian chicken sausage, Hot Italian sausage, sweet Italian pork sausage, sweet Italian sausage, Andouille sausage, or most any smoked sausage.
If your crew enjoys the heat, you can add a touch of red pepper flakes for some kick.
It would be a sausage pasta casserole but you can switch the meat to ground beef. Brown and drain the meat before adding.
Penne pasta will work in this easy pasta recipe also.
Crockpot Broccoli and Sausage Macaroni Casserole
Ingredients
- 1 pkg. Smoked Sausage Link's cut into bite size pieces
- 1 Cup broccoli chopped
- 1 Can (15 oz.) Diced tomatoes (basil, garlic & oregano)
- 3 Cups shredded sharp cheese
- 1 (13 oz.) can evaporated milk
- 1 Cup 2% milk
- 1 pkg. (1 lb.) macaroni noodles
Instructions
- Boil and drain the noodles according to package directions.
- Cut the smoked sausage links into bite size pieces.
- Cut broccoli into bite size pieces
- Set Crockpot to low temp.
- Pour the cooked macaroni noodles into the Crockpot
- Stir in the broccoli, sausage and tomatoes
- Stir in the milk and cheese
- Cook on low temp for about 2 hours.
- Serve and enjoy!

I love my slow cooker (actually, all of them). They are so convenient in the winter for comfort food and great in the summer so you don’t heat up the house.
