May Monthly Weeknight Meal Plan
Welcome to our very first monthly weeknight meal plan. We’ve been weekly meal planning for about a year now so it is time to make the switch to an entire month at once.
It was not as hard as I thought it would be and I’m glad I’ve done it. There is much less stress involved when we have a plan and we work that plan. Of course circumstances and events will arise and we may have to stray from time to time but for the most part, we will stick to the plan. It is important to plan ahead for special events, holidays and birthdays which could potentially affect your meal plan and grocery budget.
May has three holidays widely celebrated; Cinco de Mayo (5th), Mother’s Day (14th) and Memorial Day on the 29th. Memorial Day is the unofficial kick off of summer which means June will bring even more salads and fresh vegetables to our meal plan.
Weekends will only have one meal planned normally. Leftovers are essential to get through the weekends so be sure to save those in your refrigerator! Everyone deserves a day off! The exception is holidays and special occasions normally celebrated at home.

WEEK1
Monday: Grilled Pork Chops with Peach Mango Salsa
Tuesday: Crockpot Taco Soup
Wednesday: Crockpot Zesty Italian Leg Quarters with Homemade Mashed Potatoes
Thursday: Sloppy Joe’s and Oven Baked Homestyle Fries (we use Manwich and burger buns)
Friday: Mexican Three Meat House Special Copycat Recipe
Weekend: Almost Homemade Chicken and Dumplings
WEEK 2
Monday: Stovetop Grilled Hot Dogs with Homemade Cole Slaw
Tuesday: Taco’s (we’re cheating with a store bought kit!)
Wednesday: Crockpot Maple Beans-n-Franks with leftover Cole Slaw from Monday
Thursday: Skillet Cabbage Rice and Sausage One Dish Dinner
Friday: Broccoli & Cherry Tomato Parmesan Pasta Salad
Weekend: Sunday Dinner Roast Beef with Green Beans and rice.
Dessert: 3 Ingredient Crockpot Apple Dumplings
WEEK 3
Monday: Jazzed Up Meat & Potato Casserole
Tuesday: Leftover casserole from Monday
Wednesday: Mandarin Orange Salad with Mandarin Orange Dressing
Thursday: Glazed Baked Spam served on a bed of rice
Friday: Low Country Boil
Weekend: Shrimp Gumbo prepared using leftover Low Country Boil
WEEK 4
Monday: Crockpot Ranch Chicken Sliders
Tuesday: Beef and Bean Burritos
Wednesday: Crockpot Broccoli & Sausage Macaroni Casserole
Thursday: Broccoli, Bacon & Raisin Salad
Friday: Creamy Corn Chowder with Potatoes & Ham
Weekend: Crockpot 3 Ingredient BBQ Wings
WEEK 5
(Memorial Day) Grilled Pimento Cheese Burgers with Southern Style Baked Beans and Homemade Cole Slaw
Dessert for Memorial Day: Red Hot Patriotic Poke Cupcakes
Tuesday: Easy Swedish Meatballs
Wednesday: Meatball Hoagies
