6 One Dish Dinners Weekly Menu Plan

A weekly meal plan filled with one dish dinners for busy cooks. Serve leftovers on the seventh day.

Meal planning is the best way to save on the grocery budget but let’s face it, sometimes life interferes like the story below.

Our grandson’s high school baseball team wound up having a double header playoff game on Thursday. We traveled the 45 minute drive to watch both games so dinner was actually grilled burgers at the ball park on Thursday. Our team won both games! There is one more game this week, not sure which day yet but we will adjust our dinner schedule accordingly.

Sunday: Chicken & Dumplings 

You can’t beat a good Sunday dinner at home! My Chicken & Dumplings recipe uses a great recipe cheat that I learned from my Mom. When I boil a hen for this meal, I use a large hen and save some of the meat for the Chicken pot pie the next day.

Monday: Chicken Pot Pie

A homemade chicken pot pie is comfort food at its best! The ingredients are simple, only 7. We’re using fresh broth and chicken prepared from our Sunday dinner.

Pork Chop Casserole

Tuesday: Pork Chop Casserole with Green peas

Only 3 main ingredients to this old family favorite. In all honesty, I make this on busy days sometimes and serve it with crescent rolls and no other side. 

Wednesday Crockpot Pierogi and Meatballs Alfredo

Another family favorite weeknight dinner recipe that is easy to throw into the Slow Cooker. Only five simple ingredients and ready to eat in about 3 hours on high.

Thursday: Broccoli & Sausage Macaroni Casserole

Only 7 ingredients, 2 hours and the crockpot are all you’ll need for this flavorful meal. 

Friday: Crockpot Black Bean Chili and waffle iron cornbread

The secret to my chili is the combination of meats with both ground sausage and ground turkey.  Plan ahead to have leftovers for the weekend. This Black Bean Chili is perfect for that!

  2. Okay weekly menu, that is exactly what I need to get my dinner life in order. It is a constant struggle for me. As the seasons are changing I want to shift to lighter meals.

  3. I really need to start doing menu planning. We are so busy that 3 pm rolls around and I realize I have not even thought about dinner for my family. We usually end up grabbing something not so nutritious!

  4. I generally don’t cook, but when i do, I prefer to do a one-dish preparation. It’s less of a hassel after a long day’s work.

  7. My mom used to make chicken & dumplings all the time when were growing up. I don’t remember the last time I ate that meal? I’ll keep an eye out for you posting that recipe as I’m hungry for some now.

  9. Congrats on winning the games! I’m really bad at meal planning, but I do like to know what we’ll be eating during the week in advance. I’m a huge fan of one dish meals and I really want to try your Broccoli & Sausage Macaroni casserole, sounds really delicious.

  10. I need to get back to making a meal plan that I write out. I usually just do it in my head but that has issues of its own and the kids ask nonstop every day “what’s for Dinner?” Annoying.

  13. Oh, yes…baseball games. I remember those when my son was playing…loved them! My mother’s chicken and dumplings was to die for, so good. I haven’t made them in years. Now, I’m hungry for them. Your meal plan looks fantastic, one dish meals are so nice. 🙂

  14. These dishes look so tasty! I am glad you are enjoying how meal planning saves time and how you could adjust your schedule accordingly. It is such a blessing. One pot meals are great and I always think of less clean up. And it’s always a bonus when you can skip a day of cooking.

  15. One dish dinners are my go to! I try to get everything prepped in 15 minutes or less and then sit back and wait for it to be done. One dish and crockpot meals save me during the week.

  16. I love one dish meals – cleanup is so easy and your menu looks yummy. The grandkids kicked off their baseball season this past Saturday. All 4 boys are on different teams so we were at the baseball complex from 9 am to 3 pm. For the next 2 months we’ll be balling just about every night so these one dish dinners will truly come in handy.
