This Pork Chop Casserole recipe is an easy weeknight meal. Enjoy the meat and potatoes or add your favorite side dish. We have done both.
My Pork Chop Casserole, like many meat and potato casseroles, has a few main ingredients plus a few seasonings. Options include fresh or canned mushrooms or onions or you could toss in a few pieces of broccoli if you like.
Pork Chops, Potatoes and Cream of Mushroom soup will get this dish on the table for a stick-to-the-ribs yummy delight. Of course you will need the salt and pepper as well.

My Mom made this as my brothers and I were growing up. I have no idea where my mother originally got the recipe. She very well may have made it up. I just don’t know. This has always been an easy go-to recipe for those busy times when a good, hot meal is needed but not much time is available for meal preparation.
When I am cooking for two, I generally use boneless pork chops and prepare two for my hubby and one for myself. With the oven on 350Β°, supper will be ready in under one hour.
This recipe is easily adjustable for a two or three people or for a crowd. I have updated the recipe to include instructions for making a large casserole with bone-in pork chops.
Leftover Suggestion
Deconstruct the casserole and use the leftover Pork Chops to make Pork Chop Sandwiches the next day! Remove the bone and reheat them in a skillet then build some yummy sandwiches with your choice of toppings.
Although cooking from scratch with fresh ingredients is always best and I don’t recommend it, you could use canned potatoes if you don’t have time to prepare fresh one’s. You will probably need to reduce your cooking time but I am not sure how much as I always used fresh potatoes.

Did you know, the skins on the potatoes provide fiber to your diet? Yep, and we do need to find ways to add more fiber to our diets.
How to Make This Pork Chop Casserole with only 3 Ingredients
The original recipe used only 3 ingredients;
- Pork Chops
- Potatoes
- Cream of Mushroom soup
When times are hard and money is tight, skip the mushrooms and don’t purchase Smoked Paprika if you don’t have any on hand. Of course we pretty much all have some Salt and Pepper in the kitchen so by all means, season the meat and potatoes.

While going through my mother’s recipe collection, I came across some jokes. This particular one was in a hand typed cookbook which my mother’s best friend, Jean J. made for her friends and family.
Guilty Plea
I’m guilty, Judge,
I fell apart.
I ground him in the Cuisinart.
That is the last time,
He will say,
“That’s what I had for lunch today.”

You can never go wrong with mushroom soup! My grandmother used to make something similar to this, but she used baked potatoes on the bottom, layered the pork chops on top and then smothered with the soup. Can’t wait to give this simpler version a try!
Coming to you from the Momma Told Me link up π

Your grandmother’s recipes sounds good too. I’m wondering if she actually baked the potatoes first before putting the rest of the casserole on top?
Artney says
This looks so yummy! I’ve gotta try this soon!
Amanda Matheny says

And lol at the joke!!

It is the kind of recipe that men love, meat and potatoes! The way to a man’s heart is through his stomach, they say π
Kristen from The Road to Domestication says
Okay, LOL at the joke, because my husband and I JUST had this conversation about leftovers yesterday – “I don’t want the same thing I had for lunch for dinner!” LOL This looks like a yummy comfort food recipe!
Shirley Wood says
My husband is exactly the same way! He doesn’t care for leftovers unless it is lasagna, soup or baked spaghetti.
Alli Smith says
Cute joke, Shirley! And I love pork chops cooked that way and I leave the skin on my potatoes, too. They are too good to cut away.
A few days ago my youngest daughter was browsing through one of my old cookbooks and she found a joke and couldn’t stop laughing.
Your pork chop casserole is perfect for a cold winter night! I’ll be making it soon!
Shirley Wood says
Those old cookbooks provide a lot of entertainment, they are not just for recipes are they? For me, looking at cookbooks is a lot like looking at pictures, I get caught up in it and the next thing you know, hours have passed π
I hope you enjoy the Pork Chop Casserole. I know we will be enjoying that Mexican Corn Casserole soon π
Dee says
This sounds great, Shirley, and I was planning on making pork chops tomorrow. I may have to change the recipe! Love the joke too. π
Shirley Wood says
I hope you give the recipe a try, Dee. Let me know how you family liked it! I love using recipes which allow room to make changes, I’d love to hear how you make yours.
