Summer Menu Plan #14 with Homemade Creamy Cole Slaw

I think you’ll find our Homemade Creamy Cole Slaw recipe to be super easy to make, with only 4 ingredients, and a nice addition to your summer menu planning. We’re serving it twice on this week’s menu.
A Homemade Creamy Cole Slaw recipe is a staple for any summer menu plan and ours is so easy you could teach your children to make it.

I’m premeditating leftovers for our pasta chicken salad planned for our Monday menu so I’m tossing a whole chicken in the crockpot for Sunday dinner. Cook once, eat twice! Our Crockpot Roasted Chicken & Vegetables is not a heavy meal and it is a one pot dinner.
Carrots, onions, potatoes and chicken sounds good to me! If you’d like something green, toss some broccoli in the pot about half way through the cooking time.

Be sure you saved some chicken from the Sunday dinner menu for today’s salad. This is a quick, easy and light meal which we always enjoy. I serve my Parmesan Chicken & Veggie Pasta Salad on a bed of lettuce. Go here for another yummy idea using a box of Suddenly Salad.


BLT’s are a summer staple here in the south! Adding them to the summer menu once a week is a pleasure in my home.
There is no ‘recipe’ per se for BLT’s. We cook our bacon in the oven. I like to crisp the lettuce after washing it by placing a few ice cubes on it while the bacon is cooking. I allow the ice cubes to sit for about 10 minutes and then place the lettuce on paper towels to dry. We slather lots of Duke’s mayonnaise on our plain bread and layer the ingredients; lettuce then tomatoes and finally the bacon! I like mine light on the salt and heavy on the pepper. How do you make yours?


Since we already have bacon on our minds from Tuesday nights dinner, let’s go ahead and add it to the Wednesday menu as well. Our Broccoli, Bacon & Raisin Salad makes a number of appearances on our summer menu. We love this salad!


We’ve had chicken on our menu two nights and bacon on our menu two nights so we’re going meatless tonight! We love this recipe for Sweet & Salty Strawberry Watermelon Salad. Those candied pecans combined with the feta and red onions create such a flavor explosion! It’s a perfect summer menu option.


Although Friday night is frequently date night, we’re staying in. I’m stopping by the Kroger on the way home to grab a Rotisserie chicken and Hawaiian rolls!

Home grilled hot dogs on a summer Saturday menu is almost mandatory, isn’t it?

Can I use raw apple cider vinegar for the coslaw, or do I need a different kind?
Hi Lashae! Thanks for stopping by. I have never tried using apple cider vinegar but if it was all I had on hand, I would try it. Let me know how it goes. Someone else may also like to know.
