January Weeknight Meal Plan

When your days are very busy, trying to figure out what to cook for a weeknight meal can become a burden. 

No resolutions for me, just goals and plans. My new Weeknight Meal Plans for this year are going to include an entire month of menu ideas along with links for recipes.

Of course life happens and plans change so let’s be flexible with these meal plans. If the grocery store has chicken on sale, there will be lots of chicken on the menu! God bless those chicken recipes, right? Same goes for ground beef!

Let’s dig right in and see what’s cooking in January! There are usually 5 weeks in January. The fifth week goes into February but I have included that whole week in the January Meal Plan to make life easier.

Week 1

  1. Savory Beef and Veggie Hand Pies with Homestyle fries
  2. Grilled Peanut Butter & Jelly Sandwiches with chips
  3. Breakfast for supper. Grits, Eggs, Bacon and Sausage
  4. Baked chicken , Baked Potatoes and Green Beans
  5. Homemade Vegetable Soup and Cornbread
  6. Leftover Vegetable Soup and Cornbread
  7. Salad with Cornbread Croutons

Week 2

  1. Not Quite Mississippi Crockpot Roast and Homemade Mashed Potatoes and Green beans
  2. Make sandwiches with leftover Roast Beef and serve potato chips and Pear Salad
  3. Crockpot Taco Soup with Tortilla chips
  4. Jazzed Up Meat & Potato Casserole
  5. Leftover Casserole and make this easy dessert; Cherry Sweet Rolls Not Quite From Scratch
  6. Crockpot Zesty Italian Leg Quarters with your favorite green veggie and this easy recipe for Simple Roasted Butternut Squash
  7. Crockpot Deep Dish Pizza and Boiled Peanuts to snack on

Week 3

  1. Crockpot Cube Steak with Mushroom Gravy  with rice
  2. Cabbage Soup with Homemade Cornbread
  3. Shrimp Tacos and Easy Homemade Guacamole
  4. Easy Chicken Parmigiana with Italian butter with Deli sliced bread
  5. Easy Swedish Meatballs
  6. Meatball Hoagie Sandwiches using leftover meatballs
  7. Iron Skillet Parmesan Italian Crusted Salmon with homemade mashed potatoes

DESSERT: Pineapple Angel Food Cake

Week 4

  1. Crockpot Roasted Chicken and Vegetables(a complete meal)
  2. Homemade Chicken Pot Pie (one dish dinner)
  3. Cajun Shrimp Burritos with Avocado Lime Sauce with Easy Homemade Guacamole and tortilla chips
  4. Crockpot Broccoli & Sausage Macaroni Casserole (one dish dinner)
  5. Leftovers
  6. Crockpot Chicken and Gravy with Rice and green beans
  7. Instant Pot Sausage Tortellini Soup

DESSERT: Soft & Chewy Strawberry Cake Mix Cookies

Week 5

  1. Easy Classic Baked Lasagna with your favorite bread and maybe a side salad
  2. Hot Dogs with Baked Beans and Creamy Cole Slaw
  3. Oven Baked Smothered Cube Steak (video above) with rice and Roasted Brussel Sprouts
  4. Homemade Chicken & Dumplings almost from scratch (one dish dinner)
  5. Crockpot Black Bean Chili with crackers
  6. Pork Chop Casserole (potatoes included) Just add green vegetable
  7. 3 Ingredients BBQ Wings with Fries

DESSERT: Bacon Pecan Chocolate Chip Cookies
