Soft & Chewy Strawberry Cake Mix Cookies

I still remember the first time I ever tasted cake mix cookies.

It was sometime back in the early 1980’s and they were baked by a special lady who I called my ‘other mother.’ She was an excellent cook and baker from whom I learned a lot, not just about cooking but about life in general.

Momma and Ms. J were friends for the majority of their lives. Our two families celebrated many births and holidays together. I still have the little outfit Ms. J gave me when my first daughter was born. We used to have a big outdoor event in the yard between our two homes every year on the Fourth of July. We shared Thanksgiving meals and Santa came to visit all the grandchildren every year at one of the two homes. So many fond memories. These two ladies enjoyed coffee and conversation every chance they could just as in the photo above. They had a standing agreement between them that if one of them died, the other would hurry over and clean the house before people came. 

As I mentioned, Ms. J was an excellent cook and baker. She made a cookbook of her recipes back when typewriters were the in thing. Can you even imagine typing multiple copies of each recipe? That’s what she did. I inherited my mother’s copy of that well worn cookbook. I love this anecdote Ms. J added in the front. 

Ms. J’s cookies are called Cake Mix Sandies and I adapted my recipe from hers using the basic ingredients. Hers have pecans and use a different flavor cake mix. 

My Strawberry cake mix cookies are really easy to make with only five ingredients. You’ll have them mixed up in minutes and you can go ahead and spoon them up and bake them but they are just a little bit better if you chill the batter in the refrigerator for about 30 minutes.

Ingredients

  

1x2x3x

• 1/2 stick Butter
• 4 oz. Cream cheese
• 1 Egg
• 1 tsp. Clear Vanilla
• 1 Box Strawberry Cake Mix

Instructions

 

• Cream butter and cream cheese together in mixing bowl on medium speed.
• Add egg and vanilla and mix until blended.
• Add cake mix and mix until blended. Will be moist and sticky.
• Place the cookie dough into the refrigerator for about 30 minutes prior to baking.
• Scoop cookie dough by rounded spoonful. Roll into a ball and flatten between your palms.
• Place cookies onto baking sheet lined with parchment paper or sprayed with non-stick spray.
• Bake in preheated oven at 350º for approximately 12-15 minutes. Oven temperatures vary so check often.
• Allow to completely cool before icing.
• Store in airtight container up to 5 days.
