February Meal Plan Week 4

The Week 4 February meal plan is loaded with delicious dishes and easy recipes. A grocery list for entrees is included.

In this weekly February meal plan we are cooking an easy dump soup recipe for Taco Tuesday, learning to make a scrumptious restaurant-quality Chicken Cordon Bleu and a skillet stovetop casserole with cabbage, sausage and rice. A couple of lighter dishes this week include; Broccoli pasta dish and Rotisserie chicken fajitas. We round out the week with cheesy crust Baked Tilapia and Maple syrup and Apple roasted Pork loin.

About the meal plan

  • This meal plan will serve 4. Some recipes will serve more than four depending on your portion sizes.
  • It’s a meal plan for one week of dinner ideas.
  • Some recipes are intended to create premeditated leftovers, like casseroles or large pots of soup. This saves on the budget.
  • It is understood that you have common ingredients in your pantry such as salt and pepper so those are not included in the ingredient lists.
  • Some recipes will call for ingredients that can be used in multiple recipes for the week. Such as a head of lettuce can be used to make side salads with a small amount also portioned for tacos. A bag of carrots can be used for multiple dishes in one week to avoid waste.

February Meal Plan Week 4

1. Chicken Cordon Bleu

A made-from-scratch classic stuffed chicken breast recipe with a bonus creamy butter sauce. Perfect for a weeknight meal or a special occasion meal.

Side Dishes

Roasted potatoes go well with this dish. Good green vegetables include either Italian beans, green beans, or peas and carrots.

Grocery List

You probably have most of these ingredients in your pantry already.

  • 4 boneless skinless chicken breasts
  • 8 slices deli ham
  • 8 slices baby Swiss cheese
  • Sea salt and black pepper, to taste
  • ¾ Cup all-purpose flour
  • 1 Tbsp Italian seasoning, divided
  • 1 tsp garlic powder
  • 2 large eggs
  • 1/3 Cup water
  • 1½ Cups Panko bread crumbs, like these
  • ¼ Cup Parmesan cheese, grated
  • 1½ Cups chicken broth
  • ¼ Cup Greek yogurt
  • ¼ Cup heavy cream or Half-n-half
  • 2 Tbsp Dijon mustard
  • ¼ cup unsalted butter, cut into pieces
  • ¼ Cup all-purpose flour
  • Sea salt and black pepper, to taste
  • ¼ Parmesan cheese, grated

2. Crockpot Taco Soup with Black beans

A good Crockpot Taco Soup recipe is essential for soup season. This dump soup recipe is loaded with flavor and simmers in the Slow Cooker making it an easy weeknight dinner idea.

Side Dishes

Serve your favorite tortilla chips with the soup.

Grocery List

  • 1 15 oz. can of Black Beans, like these
  • 1 15 oz. can Whole Kernel Sweet Corn 
  • 1 10.3 oz. can Tomato Soup
  • 1 14-15 oz. can of Diced Tomatoes
  • 1 lb. Ground turkey, Ground beef would be fine also
  • 1 pkg. Taco Seasoning, like this

3. Cheesy Baked Crusted Tilapia

This simple and easy-baked fish recipe has a surprising ingredient. You will have dinner on the table in under 30 minutes with this meal.

Side Dishes

Frozen California vegetables are a great choice of side dish with baked fish. Fewer carbs and less fat. Add your favorite dinner rolls for a complete meal.

Grocery List

  • ½ Cup self-rising flour
  • 2 eggs, beaten
  • 2 Cups Cheese Doodles or Cheese Puffs, finely
  • 1 Cup dried bread crumbs
  • 2 tsp. dried parsley flakes
  • 1 Tbsp. Old Bay seasoning
  • 4 Tilapia fillets

4. Broccoli Bowtie Pasta Dinner

You can make this Pasta Broccoli Dish recipe a day or two ahead and store it in the refrigerator. This is a good dinner idea to make on Saturday then refrigerate for a light Sunday dinner.

Side Dishes

Basil grilled tomatoes can be made on the stovetop and go great with this dish. Sliced Italian bread from the Deli and this Italian butter dip complete the meal.

Grocery List

  • 1 cup Bow-Tie Pasta aka Farfalle
  • 1 head broccoli, florets only, stems removed
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 4 sliced preserved, salt-cured lemon
  • 1/4 cup dried cranberries [optional]
  • 1 cup traditional Greek yogurt
  • 2 cloves garlic
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. fresh lemon zest
  • salt and black pepper

5. Roasted Maple Pork Loin

An easy recipe for a hearty Baked Pork Tenderloin with apples makes a good entree. Our tenderloin is basted in flavorings and then drizzled with Maple syrup.

Side Dishes

This meal is a Sunday dinner kind of recipe therefore, I recommend hearty side dishes like; Crockpot Green Bean Casserole and Carrot Souffle.

Ingredients

  • 2-3 lb Pork Tenderloin
  • 1/4 Cup Packed light brown sugar
  • 2 Tbsp. Yellow Mustard
  • 1/2 Cup Maple Syrup
  • Salt and Pepper to taste
  • 2 large Apples (I prefer Honeycrisp)
  • 1 Med. sweet onion (I use Vidalia)
  • Optional: Thyme sprigs for decoration when serving

6. Cabbage Rice and Sausage Dinner

This cabbage and sausage recipe is a one-dish dinner that you can have on the table in under an hour. Loaded with flavor and is very filling. A stovetop version of a comfort food casserole but it is much healthier with cabbage and tomatoes.

Side Dish

No side dish is needed with this meal unless you’d like some cornbread or dinner rolls.

Grocery List

  • 1 lb. smoked sausage
  • 1 can of diced tomatoes with chilies (Rotel)
  • 1 cup brown rice
  • 1/2 medium head of cabbage
  • 2 tsp. Old Bay seasoning
  • 1 (15 oz.) can of chicken broth

7. Homemade Chicken Fajita Wraps with Cilantro-Lime Sauce

This chicken fajita recipe uses fresh ingredients along with homemade seasoning and made from scratch sauce for that satisfying home cooked flavor. We lower the carbs by serving these fajita wraps in Romain lettuce.

Side Dish

Make this easy Homemade Guacamole dip recipe and serve with your favorite tortilla chips. You should have tortilla chips left over from Taco soup night this week.

Grocery List

Chances are excellent that you have most if not all of the seasonings in your pantry cabinet.

Note-The recipe is included for the Homemade Fajita Seasoning and the ingredients are included in the grocery list below.

  • 3 Tbsp. Chili powder
  • 1½ Tbsp. smoked paprika
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 2 tsp. ground cumin
  • ½ tsp. cayenne pepper
  • 1 tsp. dried oregano
  • 1 Cup plain, full-fat Greek yogurt
  • 1 Tbsp. homemade fajita seasoning (recipe included)
  • 1 clove garlic
  • 2 Tbsp. fresh cilantro
  • 2 Tbsp. fresh lime juice
  • 2 Tbsp. Robust Olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 orange pepper
  • ½ small red onion
  • 1 Tbsp. balsamic vinegar
  • 3 Cups rotisserie chicken
  • 2-3 Tbsp. Homemade fajita seasoning (recipe included)
  • ¼ Cup chicken stock
  • ¼ Cup fresh cilantro
  • 1 Tbsp. Chopped green onion
  • 2 Tbsp. fresh lime juice
  • 1 head Romaine lettuce
