Menu Plan #37 Budget Stretchers
We are introducing Budget Stretchers with Menu Plan #37. It’s the last menu plan for 2016 and also the first menu plan for 2017.
Budget Stretchers are meals that allow us to get more from our grocery budget by providing leftovers for another meal, require very few ingredients or consist of low cost ingredients.
Look for our little Budget Stretcher icon underneath meals which meet one of those requirements.
It’s the first Monday of 2017! We are having leftovers from our New Year’s Day dinner.
Southern Style Cabbage Soup is a hearty budget friendly winter meal and one that we just love. Because we enjoy it so much, I’m going to go ahead and prepare Waffle Iron Cornbread as a side.
My Crockpot Broccoli and Sausage Macaroni Casserole is one of my hubby’s most requested meals. It’s really yummy and easy to prepare with only 7 ingredients.
We will both have the leftovers for lunch on Thursday.
Crockpot Zesty Italian Leq Quarters with a side on Homemade Mashed Potatoes or a baked potato. This meal is super easy to prepare and easy on the budget.
It’s always smart to prepare a meal on Friday which will yield leftovers for Saturday’s lunch and these Crockpot Ranch Chicken Sliders are perfect. We will have Homemade Cole Slaw with ours because we are planning to grill some hot dogs for lunch Sunday afternoon and want Cole Slaw with those also.
