Our February Meal Plan includes premeditated leftovers at least one night a week plus Crockpot meals and one dish dinners! Meal planning takes the stress out of trying to figure out what to cook for weeknight meals.
Our February Meal Plan begins with the last few days of January. Therefore the meal plan for the last week of January is also the first week of February meal plan.
Jan. 27-Feb 2
Tuesday: Boxed Tacos! Stock up on your favorite brand while they are on sale! (Don’t judge! You know they are really the perfect answer from time to time!)
No side dishes needed! This meal is easy on the grocery budget!
- Bacon Pecan Chocolate Chip Cookies
Saturday: Groundhog Day!
This is the first full week of February and it begins with Superbowl Sunday!!! We are fans and plan to have a party spread with some of our favorite party recipes!
National Soup Day is also this week! We are celebrating with our Creamy Corn Chowder which has delicious bits of ham. It does start with fresh corn on the cob and we even boil the cob! You won’t believe how delicious this soup is unless you make it! Please do!
Sunday: SUPER BOWL!!! Football Party food! Try any of these recipes for party food.
Monday: (National Homemade Soup Day)
Tuesday: Taco Tuesday!!
- 3 Ingredient Toasted Oat Bars
Saturday: Breakfast for supper.
I always like to include at least one dessert each week usually on the night we have leftovers. This week it’s a cake! If you love tricks with cake mix as much as I do, you are sure to love not only how easy this recipe is but how delicious the flavors come out too!
Tuesday: Taco Tuesday!
- Crockpot Taco Soup
- Tortilla Chips
- Glazed Baked Spam
- Green Beans (canned)
Thursday: Valentines Day! Go out to eat!
Our Sunday dinner this week goes all out! I don’t do that often because if I did my family might start expecting it! The good news is that there will be leftovers for Monday! Cook once, eat twice! I did add my Baked Chicken Tender recipe to Monday night just in case all of that crazy good Bacon Wrapped Tenderloin is all gone which is a real possibility!
Monday: (18th President’s Day)
- Baked Chicken Tenders
- Leftover sides from Sunday dinner
- Leftover Baked Spaghetti
- Homemade Crescent Apple Turnovers
- Cheesy Mashed Potato Smothered Meatloaf
- Peas & Carrots (canned)
Waffle Iron Cornbread is on the meal plan this week! I don’t know what it is about making cornbread in the Waffle Iron that kicks the flavor up so high but trust me, it’s extra yummy! Make enough for the next day and just heat it in the microwave.
February 24-March 2
- Southern Hoppin John
- Leftover Waffle Iron Cornbread (can be heated in microwave)
- Biscuit Donuts
