Tips for Making Chocolate Dipped Strawberries
Make sure your strawberries are completely dry before you begin dipping. If they are not dry, the chocolate will not adhere properly. Allow the strawberries to air dry at least an hour before you begin.
Avoid having your chocolate break apart and fall off when you bite into it by adding in some form of oil to the melted chocolate. This is why recipes for melting chocolate have some form of oil in them. You can use most any taste free vegetable oils you have on hand. Do not use olive oil.
How To Melt Chocolate for Dipping
Always melt chocolate slowly to prevent burning. It is best to melt it almost all the way but not quite and then stir to finish the melting process. This method will ensure you don’t burn the chocolate. Low and slow is the way to go when melting chocolate.
Moisture, even the tiniest bit can ruin your chocolate dip so be sure whatever you are dipping is completely dry. Pat dry or better yet, allow to dry naturally.
Melting Chocolate in a Double Boiler
A double boiler is essentially one larger pot with a smaller pot stacked on top, like this one. To melt chocolate in a double boiler, cover the bottom of the bottom pot with water. You don’t need much water, just enough to create steam but not allow the top pot or bowl to come in contact with the water. Heat the water until it begins to boil then turn to the lowest setting. Add the chocolate in small amounts, stir until it begins to melt and then add more chocolate and stir. Continue this process until all of the chocolate is melted. Don’t walk away because the chocolate will scorch very quickly and have to be thrown away.
Make your own double boiler. If you don’t have an actual double boiler, I sure don’t, use a heat safe bowl over the bottom pot. It works just fine.
Melting Chocolate in the Microwave
Use a microwave safe bowl or glass measuring cup large enough to hold all of your quantity. Heat for 30 seconds the first time, stir then zap 15 more seconds and stir. Keep heating and stirring until the process is complete.
When melting chocolate in the microwave, you simply must stir every 15 seconds. You might be surprised to know, or are about to have an ah ha moment, that when melting chocolate in the microwave, it may actually be melted but retain it’s shape. My lesson was learned the hard way so stir every 15 seconds.
Keep doing this until the chocolate is almost completely melted. Stop zapping in the microwave and simply stir gently until the last little bits are melted.
Ingredients for Chocolate Covered Strawberries
- 1 (16 oz.) container of fresh strawberries
- 1 1/2 Tbsp. Coconut oil, divided
- 1 Cup Semi-sweet chocolate chips
- 1/4 Cup Chocolate chips
- 1/2 Cup Pecans, very finely chopped
For this recipe, we will be making both chocolate and white chocolate dipped strawberries beginning with the chocolate.
Begin by lining a large baking sheet with parchment paper, wax paper or paper towels. Set aside.
Wash your strawberries and place on the baking mat to dry. Allow to dry for about an hour or until completely dry. If there is any moisture at all remaining on any strawberries, pat dry with a paper towel until completely dry.
Place your chocolate chips and one-half tablespoon coconut oil in a medium microwave-safe bowl. Microwave the chocolate chips 15 seconds at a time, stirring in between each segment, until almost completely melted. Then simply keep stirring until all the chips are melted. Read my tips above for melting chocolate in the microwave. If you prefer to use the double boiler method, that is fine.
Dip the strawberries into the melted chocolate until covered as far up as you like. Gently drag the bottom edge of the strawberry against the side of the bowl to remove the excess chocolate then place onto the baking sheet to dry.
Once you are finished dipping all of the strawberries, place the baking sheet into the refrigerator for about 20 minutes or until the chocolate is set. I would place these into the refrigerator while I make the white chocolate dipped strawberries.
Adding the white chocolate drizzle
Melt the white chocolate chips using the remaining coconut oil and the same microwave method.
Remove the pan of chocolate dipped strawberries from the refrigerator. Carefully drizzle the melted white chocolate over about half of the chocolate covered strawberries using a spoon.
White Chocolate Covered Strawberries with Pecans
Dip the bottom of remaining strawberries in the melted white chocolate and then dip into the bowl of chopped pecans. Swirl until the bottom of each strawberry is completely coated in pecans.
Place on the baking sheet and sit in the refrigerator about 20 minutes or until set.
