Mandarin Orange Salad and dressing recipe

My Mandarin Orange Salad rest on a bed of iceberg lettuce. I like to crisp the lettuce so my salads have that crunch we like to bite into.

How To Crisp Iceberg Lettuce

Iceberg lettuce is easy to crisp and crispy lettuce makes the best salads.

Begin by removing the lettuce core. Give the core a good pound onto the kitchen counter and it will pop loose. Pull out the core and tear the lettuce into two large pieces. Now run cold water through the lettuce leaves and place them into a large colander in the sink to drain for a few minutes.

Top the lettuce with lots of ice. Allow the lettuce to crisp for about 30 minutes. Drain the lettuce on paper toweling that you have spread out onto the counter. Use more paper towels to pat dry the top of the lettuce and it is ready for your salad recipe.

This is a very simple salad with only a few easy ingredients. The best part is that you can tweak the recipe to suit your families tastes. See the list of optional ingredients you can add to a Mandarin Salad.

Mandarin Orange Salad Ingredients

  • Iceberg lettuce 
  • 2 Tomatoes
  • 1/ 2 cup Craisins 
  • 1 Boiled egg
  • 1 small can (10 oz.) Mandarin Oranges, drained

Be sure to drain the juice from the can of mandarin oranges. You will need 1 Tbsp. for the dressing recipe. This is a make ahead recipe. You will want the flavors to marinade for several hours prior to serving.

Mandarin Salad Dressing Ingredients

I took a dressing recipe we use all the time and adapted it to add a hint of mandarin orange flavor. The flavor outcome was exactly what I’d hoped for.

Only 4 ingredients in this Mandarin Orange Dressing recipe.

  • 1 Tbsp of Mandarin Orange Juice you drained from the can of Mandarin oranges
  • 3 Tbsp. Apple Cider Vinegar
  • 6 Tbsp. Sugar
  • 1 Cup of Mayonnaise

Directions

Step 1

Rinse the lettuce in a colander, drain and dry on paper toweling. Line paper toweling on the counter and spread out the lettuce. Take more paper towels and pat the lettuce dry.

Step 2

Rinse the tomatoes, dry and cut into bite size pieces

Step 3

Chop the hard boiled egg white. Adding the crushed boiled yolk to your salad is optional

Step 4

Add the lettuce to a large bowl, tearing into bite size pieces as you add it.

Step 5

Now add all of the remaining ingredients and toss well to blend.

How To Make Mandarin Orange Dressing

Add all of the dressing ingredients into a small bowl or large measuring cup and stir using a small whisk until completely blended.

Store the dressing covered in the refrigerator until ready to use.

Ingredients

  • 1 head of Iceberg lettuce

  • 1 hard boiled egg whites, chopped
  • 1 can of Mandarin oranges, drained (reserve the juice)

  • 1 Tbsp. Mandarin orange Juice (from drained can)
  • 3 Tbsp Apple Cider vinegar
  • 6 Tbsp. sugar
  • 1 cup of mayonnaise

Notes

I like to make this dressing in a measuring cup because it has a spout to pour.
