There are so many different ways to make Shephard’s Pie but I prefer anything easy with fewer ingredients as long as the flavor isn’t sacrificed. The secret ingredient in this recipe is a can of Homestyle Vegetable Soup! No frozen veggies and we’re trying to get supper on the table to quick for fresh veggies in this particular recipe.
Easy Veggie Shepard’s Pie
Ingredients
- Cooking spray
- ¾ lb. potatoes
- 1/8 cup half and half
- 1 oz. butter
- ½ teaspoon salt
- 1 egg yolk
- 1 (10.5 oz. ) can of Homestyle Vegetable Soup
- 1 medium onion, chopped (Optional)
- 2 tsp. Crushed Rosemary
Directions

Preheat oven to 400 degrees Fahrenheit.

Spray an 8×8-inch baking dish with cooking spray; set aside.

Peel and dice potatoes into ½-inch cubes. Throw diced potatoes into a pot with cold water and bring to a boil; cover. Once the water begins to boil, uncover and boil for an additional 15 minutes.

Mix half and half, butter and salt together in a bowl. Heat in microwave for 1 minute; set aside.

Drain the diced potatoes; add to large bowl. Mash potatoes and add butter mixture. Mash until smooth and add yolk.
6. Add vegetable soup and onion to skillet; stir together. Cook for five minutes while stirring occasionally.
7. Add soup mixture into baking dish, sprinkle chopped rosemary leaves and top with mashed potatoes. Bake for 15 minutes.
8. Garnish pie and enjoy!

Great recipe! Since becoming a vegetarian in 2005 and vegan in 2007 I’ve missed having Shepard’s Pie, but your dish makes it easy to transform this favorite into a vegan dish for sure!

Shepard’s Pie is one of my all time favorite meals. It’s so hearty and filling. I typically have it with lots of ground beef but this recipe is perfect for Meatless Mondays.

Looks easy for real. I like Shepherd’s pie but usually do not like the long process of making them. I was happy to find an easy one too last week in a cook-book to make. I agree with the cold weather here in Chi-town – need to keep the house warm always!
I have never made or eaten or even seen a Shepards Pie. I know I will love it if I ever try it. I need to do this. I’m not even sure what it normally has in it.
